An excellent first choice
I fail to understand the complaints of two previous reviewers. This beautiful glossy volume is an excellent compendium of previosly publisned Cook's Illustratedrecipes. In style and format it would make an excellent first choice for anyone wishing to be introduced to a selection of the best of the best recipes from America's Teet Kitchen (i. e. Cook's Illustrated) without the tediousness of having to wade through lengthy descriptions of how the recipes were arrived at.
Good, but consists entirely of previously published recipes
This book is a compilation of recipes from other America's Test Kitchen publications that have been released within the last 1-2 years, including their magazines (Cook's Country and Cook's Illustrated) and books (The Best Light Recipe, The America's Test Kitchen Family Cookbook, Best American Side Dishes, and The Best 30-Minute Recipe). Above each recipe there is even a thumbnail image of the publication in which the recipe originally appeared.Scattered throughout the book are tutorials (such as "Rice and Grains 101" and "Pie Pastry 101"), equipment reviews, and taste tests (similar to what appears in Cooks Illustrated Magazine).
Recipes are a dime a dozen ...
I subscribe to Cooks Illustrated, owned season 4 and 5 DVDs and have bought all their previous 6 books under the America's Test Kitchen title. This is my 7th. I used to subscribe to Cooks Country but found that to be amateurish and have since discontinued.

Great How-To Manual for Home Brewers
The Alaskan Bootlegger's Bible contains lots of helpful information about how to make your own wines, beers, flavored liquers - just about anything involving brewing your own alcoholic beverages. It is loaded with recipes and step-by-step processes that take you from the planning stages through the bottling stage. It also addresses all of your equipment needs for producing various types of beverages, including a section that details how to make a lot of your equipment. It also addresses some practical and safety considerations, which I have not seen in other publications.
GREAT BASIC HOW TO GUIDE
Easy to understand,detailed,and has excellent diagrams. some intersting folklore/anecdotes re: Alaska,and the life there. author emaphsizes that this is strictly just for academic purposes,and that practical use is illeagal. loads of recipes, for liqeurs,liquors,wines,and beers. great detail re: malting process,and managing your mash.

Very, very Dissappointing
I like Susana Palazuelos, I enjoyed her meal at Izote in Mexico City...and have used her recipes, but I have no idea what she was doing for this book.

One of the Best Allergy Cookbooks There Is
This is one of the first allergy cookbooks that I purchased, and some of my family's favorite recipes are in it.My son is allergic to milk, egg, soy, peanuts, and tree nuts.We also avoid fish and shellfish.For people avoiding those allergens, this is a very good cookbook; however, there are some recipes that call for soy, fish, and shellfish.We either substitute in those recipes or do not use them.
Not a Wheat Free/gluten free book, but good
My son is allergic to all Beans also (Legumes) and Beef so this book only had a few recipes I can use.The Wheat can be replaced with Bette Hagram's Featherlite recipe 1:1 if you can tolerate rice, corn, tapioca starch and potato flour. I'm a tough critic to please since my son's allergies include Dairy, Beef, Soy, Wheat, Peanuts, Treenuts, Gluten Grains, Legumes, Shellfish, Food Dyes, Curry spice, and Cumin.

Good source of new baked goods recipes
As the mom of a picky food allergic child (eggs, milk, nuts), I am continually looking for new things to try.I found several good recipes - the waffles are a big hit in my house.Both cakes - the sugar vanilla cake and the white cake - also went over well.The egg replacement of baking powder, oil, and water seems to work very well in baked goods.I am looking forward to trying some of the muffin recipes.I do find the relatively small size of the book makes it hard to use while cooking. ... More than just a cookbook
I bought this book mostly for the recipes.It is full of the "philosophy according to Ted" (which I love by the way).The book may leave you wanting more if all you want is a wild game cookbook.I do have to say that the recipes are excellent.My kids beg for the Deer Stroganoff.It is also one of my all-time favorite dishes to eat with the deer that I harvest.I have tried several recipes from the book and all were accurate and very tasty.Thanks to Uncle Ted for creating more than a cookbook - I read from it while I am cooking.

Reading This Book is a Meal in Itself
I don't hunt and haven't yet prepared big game dishes, but I'm always on the lookout for new recipes with which to expand my repertoire.This book made me resolve to take up cooking big game.

Hard work with a payoff
I bought this book after examining its beautiful pages various times at the bookstore.Last night I cooked from it for the first time.It was a lot of effort, but it did pay off.Last night I made the Deviled Chicken Thighs.My work began Sunday with four trips to different stores to assemble the various necessary ingredients.Yep, two supermarkets, the liquor store, and a bodega (I live in Jersey City, just outside Manhattan).Then the next day was the cooking.Altogether it took me about four hours for that part of the task.Honestly, halfway through I seriously considered giving up.But I persevered, the author's directions are very precise and very clear, so I just concentrated on completing each step.When I was done, my kitchen smelled wonderful (between peals of the smoke alarm set off by the cooking of chicken in oil) and I had a beautiful and delicious meal to serve.So, my thoughts are this . . . don't pick this book if you expect a quick and easy meal to toss onto the table.This is serious cooking and it takes a lot of work and dedication to get through it.But, wow, when you are done, you feel like you've climbed a mountain, and you have this wonderful meal to show for your efforts.Also--now that I have been through the entire recipe, I bet I can do it again, with much less effort and pull it off again more easily.Meaning -- I learned some things about cooking while working my way through it.Not something you can say about a lot of cookbooks.I'm going to put this book aside for a month or so, and then carefully pick a recipe and do it all again.I recommend this book heartily to someone who is interested in cooking and most of all LEARNING.

I really like this book. I has it all!!--beautiful to look at, fun to read, and very inspiring. It is set up nicely too, by season, so you will use the freshest ingredients. For me, having the menus laid out is very helpful. We will have some fabulous meals from this book!

Good information, bad organization
I had to use this book as a text for a purchasing course I took and was frustrated to no end by its lack of organization.The different sections often repeat and even contradict themselves, although this improves substantially when you get to the chapters in the second half of the book on specific categories of items to be purchased.Each chapter is followed by a list of 30-40 "important words and concepts," most of which aren't defined or explained in the chapter but just mentioned in passing.Some of them aren't even mentioned in the chapter, and many of them appear on two or three different lists.The index is so limited as to be next to useless, and there is no glossary.I found myself continuously referring to other books and internet resources to get the information I needed, not because it wasn't in the book, but because I couldn't *find* it. Awesome Book!!
This text is very easy to use.It covers just about every aspect of purchasing in the hospitality industry, and makes it simple to find what you're looking for.The information is very straight-forward, and it's written in plain english for anyone to understand.

the best food i ever tasted
hi its me again my mom purches this book when it first came out. she knows how to cook and cooks diner every nite. she love to wach paula deen on the food channel one day on a saturday she saw this realy good thing that she saw there the next day she made it for us and it tasted soooooooooo good and another time she made a choclate chip pie it was so good too I recomed this toy for every parent who likes too cook and there kids like there food.

Best cookbook I've purchased in a long time
My new thing is to check out books from the library first, then buy.This technique has saved me hundreds of dollars.I'd take out a book I really wanted to buy, and after browsing, only liked a handful.Well, this cookbook was so incredible from start to finish, that I quickly returned it to the library and bought my own copy.
Good but not her best
This is Paula Deen's first cookbook that gets the "star treatment" - nice hardcover, beautiful color photos of some of the mouth-watering menus, and a nice format. She has arrived! However, I don't think it is necessarily her best content-wise. Her previous books, the little paperback editions with the plastic ring binders, have far more recipes and feel more "intimate," if there is such a thing with a cookbook! This book features sample party menus and have titles like "A Bridge Club Supper" and "A Georgia Bulldawg Parking Lot Tailgate." Most of these feature a main entree, a few side dishes, an appetizer or two and a dessert. The chocolate sandwich cookies (on page 94) and the pimento cheese spread (page 40) are two recipes that are delicious and very easy to make. Some of the recipes, including the chocolate sandwich cookies, didn't originate with Paula and she says so in the introductions to the menus. ... Read more

`Simple Italian Sandwiches' by Jennifer and Jason Denton and Kathryn Kellinger contains recipes from the New York City restaurants `ino' and `inoteca', which happen to be a small part of the growing Mario Batali / Joe Bastianich empire of restaurants. They are such a small part that their names are based on the Italian suffix that means `small'.

Finally, a sexy book for sexy cheese.This book gives fantastic insight to the world of fromage, without being too dense.Rob makes it cool to be in to cheese.I loved the top ten sexiest cheese list.That's just great.The whole book was filled with good insights on so many cheeses, most of which can't be found at the local grocery.I'm getting hungry for cheese just thinking about the book again.Makes me want to go visit Murray's and buy some more, even though I have plenty in the fridge already.Great book, cheese for every man woman and child.Rob Kaufelt is setting the trend, making cheese cool again.

Very interesting reference book on food
It covers the science, chemistry, lore and history of every food group.

There's a certain kind of cook who has to have this book
You know who you are. It's not enough that you know 'how'. If you love something enough to understand the how, you have to know the 'why' and maybe even the 'who' and the 'where' and 'when'.This is the book for you. There are a few books in my life that I really treasure because they unlocked secrets. Of course, I'm not curious about everything, there are some secrets that are more special than others.
THE book to tell you why and how food does what it does!
I purchased Cookwise some years back, and when I finally found this book (On Food and Cooking) and read it, I realized that THIS was the book I was looking for when I bought Cookwise.It tells you the why of everything, and it's great!No, there are no recipes or glossy photos, but the in-depth explanations of the actual chemistry behind food and its cooking are unparalleled.It totally inspires me to review my favorite recipes to see if I'm using the right flour, or beating the eggs and sugar correctly, or...!A must to read, it also talks about the history behind the haute cuisine of France, as well as cuisines from other parts of the world. ... Great for the Recently-Divorced!
After my divorce, I was bummed enough where I didn't feel like making attempts at cooking that I knew would end badly anyway.I picked this book up as a way to be able to bust out a quick meal without having to resort to clogging my arteries at a fast-food joint, or ordering yet another in a long chain of pizzas.It's got me started on road to cooking for myself, and not just simple recipes like this.That said, it would be a good book for the recently-divorced and those just heading off to college.There's a wide variety of recipes, they don't cost a fortune in unusual ingredients, and a large majority of them taste really good.

So Easy
I love this book so much I got one for my Husband, Dad and a army buddy. The recipes are easy, fast & filling. Calorie, fat and carb counts are listed and the cooking instructions are humorus at times. If I were you I'd get it. We also use Man a Can a Grill throughout the grilling season. Check that one out too!

great instruction book
This is a fantastic step-by-step instruction book. I had no idea how much planning really went into creating a wedding cake but this book lays everything out for you in a pretty easy-to-follow format. I've only made one cake so far (a sample cake, like she recommends) and the frosting was spectacular but the cake itself didn't really taste like much of anything. I'm thinking that I'll borrow a lot of the techniques mentioned in this book and apply them to a recipe from another cookbook. A must for a novice baker!

Culinary Arts.
One of the many neat features of studying at Cornell University is that, even if you're not enrolled in its famous School of Hotel Administration, you can attend one of the cooking and wine tasting classes organized especially for non-Hotel School students, and get at least a flavor of the five star culinary instruction provided by the chefs teaching at that school. (That is, you can do so if you're willing to get up an extra hour or two early on the morning of non-Hotel School student enrollment, and if you're lucky enough to beat the crowds or at least slip in as a substitute participant.) In addition to numerous recipes and pieces of valuable advice, information and memories - particularly of the last night, on which we had to put together a four-course meal, fine dining style, complete with menu, garnishments and perfectly laid table - Cornell's "cooking class" has enriched my kitchen by two items I have since found it very hard to do without: A professional grade chef's knife, and Sarah Labensky's and Alan Hause's "On Cooking," which we used as our textbook.

A meal in itself...
This book is delicious!There are excellent photos of both the dishes and the different areas and peoples of the Silk Road,The text is interesting, with information about history, cultures, cooking techniques, and food items.I appreciate that the recipes are not complicated or particularly labor-intensive.I have tried three so far, and all three were hits.I have a large collection of cookbooks, but if I had to start all over again, this one would be one of my first buys.

spectacular and delicious
this is a beautiful book with somewhat complex recipes but educational. my friend borrowed it to use it in her geography class covering the silk road topic. the pictures are spectacular. it is classified as paperback but the quality of paper and print make it as durable and beautiful as a hardback. i strongly recommend this book not just for the wonderful recipes also to amuse your eyes. let your imaginations travel!!

Good for vegetarians and non-vegetarians alike
This beautiful and highly readable cookbook contains delicious, if somewhat complex, recipes for dishes from Italy to China. Professional guidance
Great help and inspiration for anyone interested in baking good bread - especially in a traditional bake oven. (Includes chapters on how to build your own oven, which was not my main interest.) Easy language. Full of facts!

Excellent source for the dedicated baker, plus great oven-building instructions.
I bought this book looking for oven-building instructions.As an architect, I can attest that the plans and step-by-step buidling instructions are excellent.I have mixed feelings in reporting that an outstanding bakery opened right down the street about the time the book arrived, and so I haven't been able to justify building my own bread oven yet, but I look forward to that first hearth loaf.Meanwhile, I've been able to compare the excellent bread from the new bakery with my own, baked in a standard oven according to Wing and Scott's recommendations.It is evident that I'm no professional baker, but my loaves do have a complexity of flavor and longevity that are promising.

As a bkaer who was trined as an apprentice back in the 1960s before real bread was dismissed as being too time consuming, I remember much of what is discussed in this book. These methods are from ages past and still hold true today. To me it is amazing that young folk are re-discovering methods we took for granted in the production of bread of quality and substance.

Good Advice on What Goes With What
It seems that years ago there was a lot of discussion about what foods went with what wines. They that seemed to go away with the advice to drink what you like whenever and with whatever you want. But that just didn't seem to work. Sometimes the food or the wine would so overpower the other that they just did not want to go together.
