I have had this cookbook for a couple of years now and tried about half of the recipes.They have all been very tasty.My husband and I love to cook from this book after we come home from work because it's fast and allows us to eat healthy.I definatley use this cookbook more than any others I own!

As a registered dietitian, I often have patients who tell me that they don't have enough time to prepare healthy meals. I always recommend this cookbook for its quick dinners. It makes it easy to put together great tasting meals, and it provides suggestions for side dishes to make it a complete meal. It provides a shopping list, and also gives you a list of foods to keep on hand, so that you always can pull together a great meal at the last minute. Add in being heart-healthy, and you have a terrific resource. It isn't for someone who wants to spend the time cooking gourmet meals from scratch. It is perfect for moms looking for a way to have a variety of health, family-friendly meals. A wonderful resource for real life.

Anyone who takes the time to really read and comprehend this book will come away understanding that the restriction of fat in the diet stopped the progression of MS for nearly ALL of the people who strictly followed the diet, and that this is backed by following those hundreds of dieters for 35+ years.There is only one option on the diet, which is lower saturated fat to under 15 grams and unsaturated fat to under 50 grams a day.Any deviations will not succeed and therefore this is not a diet in which you can pick and choose what to follow.I guess if you have that information and follow it, you might not need the book.But, the book is full of substantiating scientific information which supports the restriction of fats, and gives much hope, and it's also full of recipes, so I wouldn't be without it.

My wife was diagnosed with MS in January, 2006 at the age of 47. This has had a big impact on her in coming to terms with this diagnosis. However, she is determined not to let the illness get her down. She has researched and spoken to people and was put onto the MS Diet book.

If I had had one minute with this book in a bookstore I would have known the title was a terrible misnomer, but I ordered it online.The book has nothing to offer on the subject of raising your own food for the table.It is a cookbook by someone who had a vegetable garden for ONE YEAR before writing it.There are no strategies for gardening and no insider knowledge of what it actually takes to raise produce consistently enough to eat.He just likes the idea.Well, I do too.As a longtime gardener and cook, I was hoping to learn something new. I didn't.

I looked for a long time in all the wrong places for a book that would teach me how to cook, not just by piling up recipes, but by showing me basic adaptable techniques and how to approach different main ingredients.My search was so frustrating that I gave up on my other condition, that the book feature modern, interesting food.This book does exactly that.

Well, Dr. Jensen again has to teach a lesson to most of us. If you don't know who Dr. Jensen, you need to find out and do what he says. Really. He was a pioneerin nutrition, alternative therapies and iridology (diagnostic through iris study) - lived for 93 years until 2001. Being saved himselfthrough nutrition from an incurable - at least at that time, in the 20's - lung disease, he turned out to study how foods impact our health. He traveled worldwide, and learned about the food of many nations. Not only that, he saved a lot of lives and taught people about the way we are supposed to eat to have a vibrant health. The first book of Dr. Jensen that I've read - titled "Doctor-Patient Handbook"; I'll post a review some day - is a good introduction to the process of natural healing, about diet, about fasting and about healing that appear whenthe body is ready to undo old diseases.

I love the text of this book, go ahead and buy it, I think it should be said that this book suffers from its format. The extra heavy pages and stiff hard binding are like those in a coffee table book and would be well deserved, if the publisher had included more photographs. As it stands, there is a scant one photo per farm profile, far too few in my opinion, especially having been visually tantilized by Ableman's beautiful descriptions. This leaves one mostly text, valuable and well written and worthy of your attention, in a book that is physically difficult to handle and read. I am hoping that publishers will read this review and remedy the problem in subsequent editions. Either add more "art" to justify the art quality of the book, or else make the book easier to curl-up with and read. I know folks who have put down the book, and not picked it up again, although they were enjoying it, and I believe that the book's physical attributes are to blame.

I was bothered by the title of this book, which implied strongly that tofu is a thing that must be disguised or improved, requiring the proverbial "spoonful of sugar" to be palatable. I bought it anyway because flipping though the recipes looked very interesting, and I reasoned that if the author really felt that way about tofu, she probably wouldn't be writing a tofu cookbook... right?

I have had this book for a couple of years and I cook from it frequently.It is true that many of the recipes call for frying, but the tofu is usually pan-fried in a very small quantity of oil.There are many Asian-inspired recipes, which doesn't bother me, because I find them all to be delicious. The recipe for Asian stock is great and it lends a lot of flavor to the dishes that use it.The szechuan tofu and green beans (which uses the mushroom soy sauce that one reviewer mentioned) is worth the small investment in a bottle of such an odd ingredient and the recipe is so good that I have gone through a big bottle of mushroom soy sauce using it only to make that one dish!And while it is true that some of the recipes are not vegetarian or vegan, I just want to add that I have been a vegetarian for a long time and I own dozens of vegetarian cookbooks, and for some reason the best ones are written by people who are not vegetarian!

I bought this book when it first came out.I was newly married and new to cooking.Not only is the information about nutrition interesting and helpful,but the recipes are fantastic.My copy of this book is falling apart-the sign of a great cookbook! I wish that Jane Brody would revise this book and provide us with even more recipes and good advice.

The first part of the book is lots of info about nutrition and so on, very interesting and informative (like talking about how potatoes have gotten a bum rap, there really healthy, she mentions one guy who lived healthily for 300 days on nothing but potatoes (and a little margarin).The second part is a few hundred recipes, which are great - easy, delicious, pretty fast, a lot of them with ingredients we keep around the house.Some of our favorites - the chili recipes, the spaghetti pancakes, multigrain pancakes (good with soy flour and blueberries), etc.This (along with books from Moosewood, Tara Duggan, and the Quick Vegetarian Pleasures book) is one of primary cookbooks; we use it all the time.Highly recommended.

My wife allowed me to knead some dough she was working on. The dough felt alive in my hands and I knew I wanted to bake my own. She gave me her old copy of the Tassajara bread book. I made the Banana Sandwich bread. As a first time bread baker I know I made a number of "mistakes." I ended up with delicious hot loaves and our house is perfumed with the orange peel and cinnamon that was in the dough. When Ed Brown writes that his recipes have a wide margin for error he is right. This is a wonderful book, written in a warm and gentle spirit.

First, this looks to be an excellent book -- if -- you eat eggs and dairy.If you follow a plant based diet, this is not the book for you.There are handful - count maybe 5 - recipes that don't have eggs and dairy.It is possible to substitute Earth Balance for butter and tinker with egg replacers for the eggs, if you want to bother.For some reason I thought that because it has Buddhist roots it would lean more heavily on plant-based baking.

My father's had a copy of this book probably since its first printing. It's falling apart at this point. When I started taking an interest in cooking, I read the book cover to cover. It's a delight to read. Brown's style is lighthearted and effusive, giving you a lot more than just a list of recipes. But best of all, it's simply a great cookbook. Zel Allen's cookbook is such a departure from much of the bland, unimaginative fare which passes for most meatless cooking. Nut meat is only the starting place, the centerpiece in some of the recipes and only one of many diverse ingredients in others.

First of all, I am not vegetarian or vegan. In fact, I am just tired of dieting and want to be healthy. Before I bought this book, I checked it out of our library, after reading the first few sections I knew this was a book I wanted in my kitchen. I was greatly impressed that it wasn't biased against meat-eaters. The consise layout is amazing. There are 1,300 recipes along with a lot of cooking and kitchen help. It has great consise nutritional information as well.

Although the ingredients may not be what you grew up with, the taste is fabulous and will inspire even non-vegetarians to compliment the chef.I couldn't find a recipe that I didn't like.The flavors are balanced to perfection, and the variations are all just as good as the main recipe.This is the first vegetarian book I was able to serve family and guests without any worries of disappointment.I especially appreciate that the book does not attempt to over-compensate for the elimination of meat by relying heavily on eggs and dairy.We are not vegans, but milk and egg allergies run in the family.I highly recommend this book for anyone who loves to cook, new brides, new vegetarians, or those who just want to use less meat in their diets.

This is the first cookbook I ever owned and it taught me alot about cooking. It presents a wide variety of useful techniques. Although the book happens to be vegetarian, I have never been a vegetarian and I would still suggest it be on your shelf as a real "bang for your buck." I still wonder just how they did it. With so many simple and clever recipes from around the world, I wonder how they put together such an exhaustive volume.

What a shame this book is out of print! My copy is falling apart from use. There are many wonderful recipes in this book. I love the tofu cream sauce, the baked macaroni and cheese with tofu cream sauce; the baked casserole with cheese, mushrooms, and bread; and the many wonderful vegetarian soup recipes (like pasta and lentil, for example). The bread pudding recipe in this cookbook is the very best bread pudding recipe I've come across. I highly recommend this cookbook.

This is a truly outstanding cookbook, the one that I have relied on the most for a decade.I feel lucky to have bought it. The recipes for the most part, don't call for a lot of exotic expensive ingredients. This is one of our favorite cookbooks (our others from Moosewood, Jane Brody, and Tara Duggan).I think every recipe we've tried so far has been a winner.One of our staples is the lasagna recipe, which lets you skip the boiling the noodles step.Easy, fast, delicious.

I believe that this is one of those cookbooks most people will end up using all the time -- and that goes for both vegetarians and non-veggies.My husband and I recently re-dedicated ourselves to lacto-ovo vegetarianism, and, using recipes from this book, we don't miss meat at all.Also, the recipes truly are "quick", the directions are simple and easy to follow, and the ingredients are "normal", which, for me, makes grocery shopping a lot easier.One more thing -- the book is not bulky and is soft-cover, so I find it a lot easier to use in the kitchen and read in general than I do big, hard-cover cookbooks.Anyway, I hope you try this book; it really is wonderful! ... The book gives some good ideas of what you can do for low fat for those starting out.Advanced?It is handy to have the hints in hard copy but most of them I can find on the net.

This is an excellent cook book for those who need to cut out as much fat as possible (I make many of the dishes for those in my office who have had heart attacks) and with care the baked goods are great. For those who can afford a bit of fat I prefer the recipes in Sandra Woodruff's larger all-purpose Secrets of a Healthy Kitchen cookbook, which use a little bit of oil in the baked goods. Her quick breads are excellent and the muffins really hearty; a great way to start the morning. I own both this book and the larger green cookbook and bounce back and forth between the two, often combining recipe elements and experimenting. ... Read more
