Any idiot can throw a steak on a grill and eat.This book goes a step further.This cookbook introduces different methods of using the grill for venison, duck, pheasant, and fish.Also included was vegetrian, side dishes, and deserts.The "Pineapple Wedges with Butter Rum Glaze" was incredible.If you are bored with the same old [stuff] from a grill BUY THIS BOOK.

Way too fancy for your average BBQ fan. Unless you like goat cheese and fennel on your quale, yes thats right quale, then you will not like this book. As a matter of fact, i dont think there is one recipe that uses a good old BEEF as the main ingredient. Make the meals in this book and you will be hungry 10 minutes later. Doesn't help that the Author is from England, not much BBQing going on there! The "encyclopedia of" collection is fantastic but they made a mistake with this authur! ... Read more

This book, written by one of the most beloved and trusted personalities in barbecue, is a rare treat. It is fun to read, delightful to look at, and exceptionally useful. Since it is unlikely that anyone other than Ardie (Remus) will ever have the opportunity or time to taste and evaluate all these wonderful sauces, consuming this book is the next best thing. I return to it often, whether to guide me in choosing the right sauce or to provide me with reading pleasure.

I found this book a big dissapointment.The authors suggest questionable practices from a safe food perspective.They suggest cold smoking meats for extended periods of time, without inclusion of proper cures.The book gives general overview concepts, but gives too many different options.It does not serve as a clear, concise how to, but more of the rambling thoughts of the authors.There are a number of sites on the WEB much more useful than the info in this book...

This book contains a ton of information. Included are discussions on various methods of smoking, and different fuels that can be used, did you know that dried corncobs may be used? There are chapters on cures and marinades, if you like doing that, and more chapters on smoking a lot of different types of food, ranging from wild game, poultry, sausage, seafood, steaks, nuts and cheese, and more. Additional chapters cover butchering, equipment and materials, and also some recipes are found in an appendix, and another appendix has information on spices and herbs. A very informative book this is.

This is a book of recipes that are most useful to ultralight backpackers that cook on a one burner stove. The recipes were contributed by forest rangers that work in diffuicult back country areas that have the "wilderness" designation. This means no vehicles allowed, even for rangers. So all food is packed in, and they live like any other backpacker. Because they spend more time doing this than recreational backapckers, they have learned to be pretty creative with backpack food off the shelf, or making their own. Fun easy to prepare recipes, from some fun and very intelligent people. Also has map showing just where the wilderness areas are in this country.
