There are some awsome recipes in here, including one for believe it or not, fried oreo cookies. There are useful frying tips too, like not to, which I won't give away so as not to spoil the book.

Like the title indicates, it has recipes for most anything you can think of frying.It also provides good information on the basics of safe frying and oil selection.I've found the general cooking times it suggests quite helpful for experimenting outside of recipes.The only problem I have is the unique names for common dishes makes finding the recipes a little challenging, but is not a big deal.

Cry Freedom!!! The Dipper has escaped from the non-greasy clutches of his merciless (and meatless) vegan jailers and been whisked away to nirvanah with the help of Schlesinger's "How to Cook Meat"!!! I have learned through experience that one should not mess with or even approach the upwind aerospace (their meat-sniffing sniffers are amazingly capable) of those humorless and vindictive cud-chewing herbivores! An ex-girlfriend and a book on vegan cooking sapped all joy out of me and then filled me up with enough plant-matter induced gas to burst the Graf Zeppelin seven times over. Four weeks of meatless perdition ended in me popping a wheelie in my Kia to McDonald's after my doctor suggested some animal flesh to ease my gastrointestinal woes. A double quarterpounder and three beef jerkies were a good start on my return to carnivore status, but good sense and a plan was needed for these scrumptious waters ahead. Amazon came through nicely for me on this one introducing me to Chris Schlesinger and friends and their tome to taste "How to Cook Meat". This book arrived at my doorstep just as I had finished assembling a brand new top-of-the-line stainless steel barbeque grill and had raided the local butchershop for their meaty best. There is tons of information in here on everything imaginable regarding turning furry animals into delectable dinner. I tried to read as much as I could, but my meat starved stomach was eyeing my liver when I came across the recipe for Traditional Dry-Rubbed Saint Louis-Style Pork Spareribs. My belly leaped with joy realizing my butcher boodle included several top-shelf hunks of this little piggy! Trying to keep from drooling on myself in anticipation, I zoomed down to the local supermarket to get the few needed extra ingredients. Chris' instructions for this recipe (and many others) were superb and excellent photos made everything easy and clear. The only hic-cup along the way was my total lack of patience and self-restraint as I burned my lower lip and roof of my mouth "previewing" these spareribs. When things literally cooled off, I actually got to taste a little as I wolfed the ribs down finding them to be piquant and sublime - much better than eating grass and roots. I've read some additional pages since then and grow more informed on everything 'meat' with each tasty word. Yes, I do eat my lima beans and chomp on an apple after the meal is done, but in the world of Ol' Dipper, Schlesinger's "How to Cook Meat" is always the main course! Highly recommended!

Meat cooking guides are not new, but few match the comprehensiveness of this volume. The best compliment I can give this book is that I actually use it. Many other general cookbooks give some pointers and guidelines for popular cuts of meat; this book covers it all. I particularly appreciate the recipes and techniques Schlesinger and Willoughby give for dealing with larger and tougher cuts of meat; this is well in line with today's trend toward long slow cooking. This is the kind of book you get kitchen stains all over, the kind you keep on a kitchen counter rather than a bookshelf.5-0 out of 5 stars Essential Reference for Making Meat More Interesting
This is the easiest type of cookbook to review because it is simply the most useful type of cookbook to have, so if you find anything which detracts from the books utility, it is a sure sign that the book is not up to snuff. The fact that the two authors are recognized experts on their subject makes the job even easier, because it generally means you can sit back and take their advice with the assurance that they know what they are talking about. These are not two interior decorators who write cookbooks as a sideline. One thing to beware of regarding the authors' reputations is that unlike their earlier books, this book is not exclusively about grilling meats. In considering this book, you should certainly be aware that grilling and barbecue are two different methods of cooking, at least as different as braising and roasting, even though the methods share similar equipment and are typically done outdoors. That means there is very little overlap between the recipes in this book and the Jamison's important barbecue book `Smoke & Spice'. Unlike barbecue, which requires smoke and which is almost always done outside, grilling wishes to avoid smoke, is done on high heat, and can be done fairly competently indoors on a grill pan, as it has a lot more in common with saute than it does with barbecue.Read more

I admit right up front that I am probably a little biased about this book and Bill's cooking because I am his cousin.But in all honesty, I can say that the recipes are excellent and easy for anyone to make.At family reunions, kinfolk can't wait to eat his dishes.It's great to have these recipes that he and Cliff Teinert have used right in our own kitchens for our own use.

As a man I do not like recipes where I have to order ingredients from internet sources because they are not available in my supermarket.This book is filled with good food made with common ingredients.I have now tried several recipes and everything has been very good and a couple have been lip smacking good.I use probably thirty cookbooks out of my collection but this one I use more than any other.So go out, get a hunk of cow, and cook it like these guys tell you to.

This is a welcome addition to a promising series, although it is slightly misleading, due probably to the nature of the series. It is only about half to two-thirds about barbecue, although within that are some really terrific and far-ranging essays. The balance is about other Southern foodways, including boiled peanuts (as a previous reviewer noted)and boudin, although any book on any subject is enhanced by Calvin Trillin's contribution. He HAS written on barbecue (indeed, his piece on Arthur Bryant's is a landmark), but the Cornbread Nation does not promise to be inclusive. It sho' nuff makes one hungry though!

Today, cooking with a Dutch oven is all the rage and this book started it all. Every Dutch oven cook should own this book, no matter how many other Dutch oven cookbooks they own.Don Holm had the guts to write the first book in modern times (that being in the 1960s) about cooking with a Dutch oven. In fact, when Holm contacted Lodge about purchasing some ovens to perfect his recipes, he was informed that Dutch ovens were no longer in production.The rebound of this once essential and now popular way to cook in the great outdoors can be attributed to one person and one book, the Old Fashioned Dutch Oven Cookbook, by Don Holm. Sure, other authors have now jumped on the band wagon and written their take on the cast iron cooking pot, just as there are now more books than ever about vegetable gardening and fly fishing. But Holm was the first, and this book was the inspiration for many of the others. The author goes beyond what most readers would expect from a cookbook. He takes that extra step and provides a bundle of outdoor stories that outdoor lovers, and others, will enjoy.And, besides a history of the Dutch oven and the stories, Holm provides many useful recipes for beginners and experienced cooks as well.This book is a good study for all serious Dutch oven cooks and beginners as well. the author spends a lot of my time telling me how good he is as a writer, and then I find many of his recipes do not work properly, or are so vague they could lead to disaster. there are just too many good Dutch Ovencookbooks today to have to put up with this author.

The introduction of "Instant Gratification" goes into the elements of a good 15-minute dessert, like a streamlined ingredient list and carefully-constructed recipes. Ms. Chattman also goes into ways that you can make your recipes go faster, like being organized and working deliberately. The 15-minute mark, by the way, doesn't include things like baking time or chilling time. It's for the actual work you have to do. The intro also discusses various time-saving kitchen implements and ingredients. 4-0 out of 5 stars Lots of easy, quick recipes
This is a family dessert book designed and written for the home cook. The ingredients are easy to find and the recipes are simple and straight forward. Some of these recipes can actually be prepared in 10 mins and the results can actually be quite impressive. However, they call for a lot of sour and heavy cream, which are quite high in fat, and some call for a lot of butter as well. I was also disappointed by the lack of photography; I always like to see a picture of the finished product before attempting to try a recipe. The only photos you'll find in this book are on the cover.

I saw this book at an William-Sonoma store and I since I was throwing an outdoor party the following weekend, I thought this would be an appropiate book! Boy, was it! Everything I made was a huge hit... the cold artichokes, the corn and tomato salad, and the BLT wraps... just to name a few. It was all really easy to prepare and the tastes were incredible. I love Williams-Sonoma and with this cookbook they really out did themselves.There are recipes for every occassion and time of year. The chicken and jack cheese quesadillas on page 211 are very easy to make and even easier to eat:) I highly suggest this book to any level of cook.

This book is lovely to own.The photographs are very artistic. I have made some of the recipes & they turned out great!The ingredients are not too obscure or complex.
