My husband is a Moroccan and I am a Taiwanese. I love Moroccan food and always want to learn how to make those delicious dishes my mother-in-law made. When I bought this book, my husband and his brother thought the recipes must be westernized. After they tasted my Briouats(shrimp and ground beef) and B'stilla (seafood and chicken), they changed their minds. Most recipes are authentic and easy to follow. It's a great book. I love it!

Cooking at the Kasbah by Kitty Morse is one of my favorite Morroccan/North African cook books.This book has deliciously wonderful recipes such as K'seksoo Be�daoui (Couscous Casablanca style) and Briouats, not to mention several tangine recipes.The photography in this book is excellent and Morse gives good information about the cuisine and to some extent culture of Morocco.I loved the section on the Moroccan Kitchen which details a list of certain ingredients that make the cuisine so unique. 5-0 out of 5 stars excellent cookbook for an advanced cook

I was not pleased with this cook book. Despite all the positive reviews I was disappionted. When I first saw the recipe using a can of soup I knew it wasn't for me. I do love the Sopranos but as far as cooking goes I will look elsewhere for my Italian recipes.

Almost every recipe I have made out of this book has tasted fantastic and has been relatively straightforward to prepare (which is really saying something coming from a domestically inept college student who can burn water!). McDermott includes a wide variety of recipes, from the banquet-worthy to tasty noodle dishes that can be thrown together in 15 minutes, and uses authentic ingredients although substitutions are suggested for those without the good-fortune of having a local Asian supermarket. Unusually, many of the recipes turn out just as good if you halve the quantities (with the exception of the coconut cream in the curries) - a plus for those cooking for one or two, and often still work with a few more or less ingredients depending on what's in the pantry. While the large number of ingredients that need to be chopped and pounded for the green curry paste make it somewhat time-consuming to make from scratch, it is absolutely worth the effort - the green chicken curry is the best I've ever had, both in Thailand and at home.

We've been using this book as our Thai cooking bible now for eight years, from LA to Baltimore.We became so addicted we even bought a kaiffer lime tree (sadly, had to leave in LA.)We love the tome kai gia, the clay pot shrimp with bean thread noodles, crab fried rice and use the dipping sauce for beef to marinate pork ribs.Once you master the flavors, the recipes are easy to adapt to your taste.We add ginger to the dipping sauce, and cut down on the coconut milk in the tome kai gai.However you do it, it's an amazing cook book.You will need to find a Thai grocery store in your area, though.

As a Persian who's trying to learn to cook persian food, this is the best Persian cookbook I have. It lists the most popular foods, the receipes are easy to follow and turn out great! Almost as good as my own mom cooks them... I would definitley recommend this book!

I have used many of the recipes, modified them, cooked them with friends and family. I have given my first copy away to my mom and then had to search bookstores to replace it.I even took it on the plane when I visited my family to make a special dinner for my dad's birthday with the whole family there.Grandma even loved it!I especially like to make the crusted saffron, yogurt rice for others.The presentation is great, but best made with a friend to share in the prep.As the author says, nushjan!

Deep fried?...lol...the person complaining about this as a health issue obviously doesn't know what Puerto Rican cooking is then.Ive been eating my mom's cooking recipes from this book for years, and no one in my immediate family is overweight or obese or unhealthy.Sure things are fried but they are fried at very high heat which keeps the oil from setting in.Plus, Puerto Ricans don't die from fried foods like typical Americans because its different.They actually perform physical labor which uses up those calories, use olive and canola oil instead of your regular vegetable oil, and eat a balanced diet full of locally grown vegetables, fruits, and raised meat. If this person is judging this book becuase of their personal health concerns, then they probably need to judge your typical American cook books and see how unhealthy they are. ... Read more

This remarkably entertaining account of history of Indian cuisine surprised me....having grown up in India and essentially having 'Indian' food every meal, this book was sort of an eye-opener.Most readers familiar with India probably knew about its rich cultural, religious, and lingual diversity. The extent of how well different ethnic groups have amalgamated in India over time is perhaps best illustrated in the evolution of her cuisine. To that extent, the book is more of a historical account of India, narrated from the point of view of food. May be all historians should try this approach!

I grew up believing that "curry" was this yellowish spice in an old faded jar that my mother in her more adventurous culinary fits would sprinkle over whatever dish she had constructed from her Betty Crockerish cookbook. Although I have later in life come to realize and appreciate through my eating experiences at home and abroad that there is vastly more to Indian cuisine than that stale old meaningless powder, Lizzie Collingham pushes my understanding of how non-Indian western "Indian" cooking is one notch further.

I also own a lot of cookbooks. I love to read them. I checked this book out from the library, and it is the only one I have ever checked out for free that I wanted to pay for, not matter how much it cost. Wonderful tips on products, unpretentious - almost apologetic in tone because she didn't graduate from culinary school (neither did I! Perfect!), beautiful photography, many, many recipes I want to try. Sandwiches fillings that become dips that become sauces, terrific adaptation and suggestions. I am so glad to have this cookbook/story. It is an irresistable love story of food and hospitality. Makes me want to go to their restaurant in Anguilla - wherever that is..... At least I can eat and serve the food! Try it at your library and see. Delightful.

Reading this book just makes my mouth water and it has some history of Italy, with references to just about every spice and tasty combinations. Wow, I ran out and bought a soup pot! One downside, making broth, Uh! Although I will say the book offers substituted canned broth I just don't want to throw these wonderful ingredients into anything less! This is a great book for readers too, I loved hearing about the Famularo family!

Not only are the soups tasty and inventive; but they are sensible and nutritious. They require little time and ingredients that are neither exotic, nor hard to find. Most recipe books are loaded with expensive ingredients that necessitate driving 20 miles from your home, and that you use only for one particular recipe. I want recipes that use inexpensive stuff I have on hand, or will have no trouble finding. This book meets those requirements. Yes, some of the restaurant reviews are out of date, but this is so much more than just a restaurant guide.It also gives details about markets, boulangeries, pattiseries and other treats and traiteurs.Gold dust.

Just came back from 8 days in Paris and I had studied and marked on a map Wells' recommended cafes, boulangeries, patisseries, fromageries and specialty food stores. Note that I wasn't so much interested in restaurants but I've NEVER known Patricia Wells to be wrong so I can't imagine her recomendations wouldn't be excellent. Although it would be great if her book were updated again since it hasn't been in 5 years I found most of the places still there and loaded with thoroughly delicious treats. Her website patriciawells.com has updates for restaurants for those interested. The French really do food right and the baguettes, cheese, wine and pastries were exquisite. Each place has certain items that are especially delightful. Gosselin really does have a superb baguette, Calixte has croissants and pain au chocolat that are really magnificent, Malineau has fruit tarts which are exquiisite, Martin has wonderful baguette sandwiches to take with you and munch on and Kayser has many wonderful delights. Go to Paris and you will come to know what Bon Appetit can really mean.

I brought this book to Paris on a recent week-long trip, and had very mixed feelings about the reviews.About half of the recommended establishments were closed, moved, or under new names/management.If you use this book, calling ahead to verify that the restaurant exists is a must!The copyright date on this book is 1999, and many of the reviews must have been written or checked earlier than that.The reviews quote all prices in francs, which constantly reminds you of the age of the reviews, and the age of the quoted prices.

This is an excellent cookbook.Meals are healthy versions of homecooked food from the main regions of the U.S.I have already cooked several recipes and my family has loved them all.I have served dinner guests with "untested in my kitchen" recipes.The meal was great!Tonight I am using a fish recipe.Can't wait to taste.With cooking like this, dieting and eating healthy is quick and easy.

I have recently bought eight (!) Weight Watchers cookbooks from Amazon, and this is the first one I have been disappointed with. I have found it easy to buy or substitute ingredients called for in the other books, but less so with this one (elk steaks, anyone?) OK, it is an "All-American" cookbook, so perhaps I shouldn't have been surprised. But this is a word of warning for would-be purchasers living outside the States. And it's puzzling that a few of the recipes call for vegetable shortening (copha). The last time I checked, this was a very unhealthy saturated fat, and definitely not recommend for anyone who is weight - or health - conscious. But my biggest gripe is that the few recipes I have tried so far have been bland or pretty ordinary - which has cetainly not been the case for the other Weight Watchers cookbooks. All up, not really recommended.

I can't speak for all the regions, but the section on southern food is amazing. Having grown up in the South where comfort food is often deep fried, I have really struggled to find authentic lowfat recipes.I can honestly say that the foods in this section were staples growing up (rather than what non-southern people think is southern food).All the recipes I have tried this far have been delicious! This is truly the sourcebook of Indian Vegetarian cooking. Author must have spent enormous amount of time perfecting the recipes. We have tried many and found them to be very easy to follow and results to be very sunptuous. It is not easy for me to be pleased by ordinary recipes as I was born in Bombay and lived there for first 25 years of my life. In Bombay, one is exposed to all regional Indian cooking and recipes, both at various homes and many, many restaurants in the city. This book has that authentic aroma and ring of Indian kitchens and Indian pots and pans. I love to cook, especially out in my backyard with the smoker.If this is you, then you will want this book. It has a plethora of recipes that will make you the envy of your neighborhood.It also explains the differences in slow smoking and grilling. You cannot go wrong in buying this book!!!

I bought this book under unusual circumstances.The day before I bought it, I complained to my sister I have way more recipes from cook books and newspaper clippings that I could ever possibly make.And I'm trying to eliminate more meat from my diet.So with a glut of recipes and a desire to eat less meat, it would only make sense for me to buy a book with 575 recipies devoted to grilling and slow smoking of dead animals.But I'm really glad I did!

I saw Sandra Pinckney's review of the Sante Fe restaurant recently on her FOOD FINDS program.The restaurant was so adorable that I immediately went online to amazon.com to see if they had a cookbook. They did.I ordered it.When it arrived at my office I started reading it and couldn't put it down.From the front cover to the last page, the artwork is exceptional.Hand-tinted photographs along with photos and murals really make this a cookbook to keep and cherish and pass down to family. I can't wait to visit Cafe Pasqual in person and hopefully get the book autographed by Ms Kagel and Ms Simpson who was the photographer. The receipes are lovely, but the book is exquisite.

Pasqual's is kitty-corner across Water Street from the St. Francis Hotel in Santa Fe; we time our trips to get into town late at night, but before the St. Francis' bar closes, so we can check in, grab a quick drink, and then roll out of bed the next morning and hit Pasqual's for breakfast.Tamal dolce, big mug of coffee, newspaper, see if the rocking horse is still in the second floor window of the store across the street (hasn't moved in four years, so far, and counting.) We love Pasqual's, its food, its Ann-Arbor-in-the-Southwest feeling ... and the cookbook is a nice souvenir thereof.The recipes? Well, plan on mail-ordering a lot of different kinds of chile powder unless you live in New Mexico.Great stuff, though, if you have the ingredients and the patience.

I was surprised at some of the reviews. This is not a quick fix cook book. Rick's aim was to deliver the food, culture, and history of Mexico and he did it in excellent form.

I am of Mexican descent and I don't even know most of the recipes, I don't even cook this good with delicious being extra.Rick is so knowledgeable, you would think he was mexican.I have tried so many of his recipes, and they are all mouth watering.Mexico should get real and give him citizenship because he truly represents the best of mexican cooking.

We've had some great meals since we bought this book. Bayless writes about Mexican food the way John Muir writes about nature, and I am happy to report the meals my wife has made have lived up to the description. We've lived and traveled extensively in Mexico and can report that this is authentic stuff, and quite a bit better than what you'll find in an American Mexican restaraunt. We went to one such restaraunt near Plaistow, New Hampshire where they charged extra for a side of salsa. That was bleak. We needed a book like this. Most of these meals do take time to make. He doesn't do things the easy way. While in Mexico we rent a cheap apartment without an oven, most of the local people we know don't have ovens so it is surprising many of these recipes are for the oven. But that's been our only problem with the book. He has strong opinions and we may not always agree but thats OK. Even has a page in the back listing websites to get hard to find Mexican ingredients. I am a serious cook with a large cookbook library. I am a Southerner who made my first biscuits and gravy at age 5. This book is a not-so-well done re-hash of other Foxfires and sorely disappointing. It is difficult to use as a cookbook-more poignant than useful. Also a tad light on recipes. A much better book from North Georgia (Southern Appalachia, like the Foxfire series) is Smokehouse Ham, Spoon Bread & Scuppernong Wine: The Folklore and Art of Southern Appalachian Cooking. I use this one a lot, enjoy reading the stories, and frequently give it as gift to visiting Yankees. Plus it has the wit, charm, and authenticity so sadly missing from the Foxfire Cookbook.

I have had this book for over a year and have tried several of his recipes which all comes out great.It is one of the few cookboos that I have which I use often. The recipes are easy to follow, simple, and most important of all, delicious.I espcially like the stuffed pepper recipe.It is also a book one can sit down to read for leisure.Plus there are lots of tips, not just recipes.

I've had the Tra Vigne Cookbook for a few years now, and I use it regularly. It's an attractive book, with beautiful photos and intriguing introductions to the recipes. It's hard to stop browsing once you open the book, and an inspiration to actually do some cooking. The dishes are great. The Chicken with Roasted Lemon and Rosemary Sauce is a favorite, as is the Fusilli Michelangelo. My niece from Thailand, for whom I made this dish several years ago, still remembers and asks for it. (Read the intro to either of these dishes and you're likely to cook them.)
