I am really enjoying this cook book! I love the look of the book - the beautiful photos of the islands, the food and the celebrities! I found that the recipes called for common items easily found in super markets, preparation was not too complicated and of the recipes I have tried so far, the dishes are delicious! I think anyone who loves to cook would thoroughly enjoy this cook book!

Although the book was written for a good cause (The Grenada Relief Fund),I have to give it a mediocre review. I when I purchased the book, I thought that it would be authenic Caribbean Food, with a focus on Grenadian recipes. However, this was not the case. Each chapter begins with a story about one of Freeman's "Celebrity" friends and the particular island that they frequent often. The only celebrities that have any familial ties to the Caribbean is Michael Douglas who is Bahamian on his mother's side; and Daisy Fuentes, who is Cuban. All of the celebs, (with the execption of Fuentes, who cooks for herself with help from her family) have professional chefs that make food for them.

I have been married to a latin man for 37 years & learned how to cook Cuban (& Puerto Rican) food.I bought the book for a friend after I showed her how to make 'ropa vieja' (translated 'old clothes'). She loves it & has tried many of the recipes. The photos truly capture the latin feel & the script of the three guys is added fun.I also live in Miami & enjoy Cuban food in restaurants or my own. A must have for your collection.

This is an excellent beginning introduction cook book for Maimi cuban food.The recipes are very easy to follow and the ingredients are clearly explained. The only challenge I had was making Cuban bread. But I finally followed the recipe exactly and got a perfect loaf of bread. Yes I really had to roll out the dough with a rolling pin to get the bread to come out right. The writers comments just kept me reading recipes, not bad for a cook book ... Read more

As the daughter of Cuban parents, I grew up in a completely Cuban home in the middle of Queens, NY. While these recipes are wonderful and helped me introduce my Non-Cuban husband and children to the wonders of a home-cooked Cuban meal, the descriptions at the beginning of each chapter did get a bit nauseating. ENOUGH about how her family was of the high aristocracy!! Get to the recipes, already!! The chicken and rice recipe is fabulous and a huge hit with everyone I have made it for - excellent for a pot luck or large buffet lunch or dinner. Enjoy and happy cooking!!

GREAT BOOK! As a Cuban-American, growing up eating only Cuban meals until my teens, I found the recipes exact or nearly exact to those of my Abeula and Tias. Since moving away from family and marrying a German-American husband (who enjoys all Cuban dishes that I make) some recipes were forgotten. I was given this book as a christmas present and now I am able to repeat those dishes that I had not learned.Easy to read and the stories are precious.

I'm Jamaican but I love Puerto Rican food, I guess it's because Jamaican and Puerto Rican cooking is pretty similar I guess.There are so many recipes in this book and it's very easy to follow.I first saw this book at my Aunt-in-law's home (She's from P.R) and TiTi Julie told me if I want to learn how to make Arroz con Gandules that I should buy this book and I did.Buy this book, you won'tbe sorry!

Deep fried?...lol...the person complaining about this as a health issue obviously doesn't know what Puerto Rican cooking is then.Ive been eating my mom's cooking recipes from this book for years, and no one in my immediate family is overweight or obese or unhealthy.Sure things are fried but they are fried at very high heat which keeps the oil from setting in.Plus, Puerto Ricans don't die from fried foods like typical Americans because its different.They actually perform physical labor which uses up those calories, use olive and canola oil instead of your regular vegetable oil, and eat a balanced diet full of locally grown vegetables, fruits, and raised meat. If this person is judging this book becuase of their personal health concerns, then they probably need to judge your typical American cook books and see how unhealthy they are. ... Read more

I also own a lot of cookbooks. I love to read them. I checked this book out from the library, and it is the only one I have ever checked out for free that I wanted to pay for, not matter how much it cost. Wonderful tips on products, unpretentious - almost apologetic in tone because she didn't graduate from culinary school (neither did I! Perfect!), beautiful photography, many, many recipes I want to try. Sandwiches fillings that become dips that become sauces, terrific adaptation and suggestions. I am so glad to have this cookbook/story. It is an irresistable love story of food and hospitality. Makes me want to go to their restaurant in Anguilla - wherever that is..... At least I can eat and serve the food! Try it at your library and see. Delightful.

I congratulate the Three Guys on their new book! I discovered their website years ago and have found it an invaluable resource for information on Cuban food and culture. I purchased their early online recipe book and still use it today. I also bought their first hardcover book and pre-ordered this second hardcover as soon as it was available.

There are whole chapters devoted to Cuban oriented desserts, drinks, appetizers, soups, entrees, side dishes, and even backyard grilling. This was a fine effort from Ms. Vanderhoof.I wasn't sure about it- this book takes some time to "ripen" at least for me. She doesn't spend any time on how they were able to take two years off and I guess that ok but I kept wondering about it.When they actually get to the Caribbean the whole book really blooms.The love that these two feel for the areas they live in becomes infectious.The recipes are interesting but where would this Michigan resident find the ingredients?When the author is writing about the people she meets, Mr. Butter, the Minister of Rum, Dingis and family, those are the most WONDERFUL passages in the book.This was not a perfect book but it is an interesting book and I'm so glad I read it.

This book really did make me want to forget life in the boring, cold U.S. and sail around the Caribbean! I read it during the summer, however, I think it would have been better to read in the winter...a nice escape from reality. Although the recipes are a little much (I doubt I could find 3/4 of the ingredients in the states, at least, not where I live), Mrs. Vanderhoof does a great jobs with her characters...I especially enjoyed reading about the rum guy!

My co-worker introduced me to this book, when she prepare to a party a "Bacalao a la Valenciana" (she had no left-overs).I asked her for the recipe and she let me borrow her book; after reading it for a couple minutes I decided to buy it has too many good and basic recipes for me not to get it, since I am new in the art of cooking.

My mom has this book and I was always experimenting in the kitchen with recipes from this book. It is very easy to follow and has great recipes. When I got married my mom took me to the store to find this book and she said to me: "You can't leave Puerto Rico without this, treasure it forever, keep your husband happy for years to come." I am the first generation as a US citizen, both parents from Trinidad. So the food I grew up eating and buying from our neighborhood trini spots...it's all I really know. Now that I am an adult I want my children to know trini food as well and this book does the trick. I have the basics down pack but this book gives me the extra confidence to try and make things on my own, without calling my mother every five minutes. Great book, great history...GREAT BUY!!!

No fue hasta que, aprovechando el nuevo precio de Amazon, mas razonable para mi, lo compre. Lo lei como leo una novela, pagina tras pagina, deteniendome no para descansar la vista y si para admirar la impecable fotografia que lo ilustra.El lector que crea que el autor lo va a dejar en el aire al mencionar tal o cual nombre o dato que no le es familiar, se equivoca. El trasfondo historico que ofrece es educativo y ameno, sin caer en lo innecesario, y sin rodeos ni regresiones aburridas. Las historias de cada chef por si solas, constituyen narrativas interesantisimas. Las numerosas recetas presentadas son, a mi modo de ver, faciles de seguir y asequibles para cualquier aventurado en la cocina, sea chef o cocinero casero. Sea puertorriqueno o de cualquier otra nacionalidad, el lector quedara complacido pues, el autor y la editorial han tenido en cuenta a los lectores internacionales que no necesariamente estan familiarizados con la terminologia de la cocina puertorriquena. Comming from a Rasta I must admit that it is hard to find books that teach u to cook vegeterian and "ital" all at the same time.All though I already knew how to do both BEFORE I bought the book,It was still a nice gesture to see the recipes ranging from all over the carribean and African Decent.Some of these recepies include but are not limited to peas and rice (made with brown rice),herb dumpling,plenty of different soups, stews, tofu patties, derserts including Ital ice creams (mango, coconut, pawpaw...etc ),Breads made with no added perservaties or dairy products (fully vegeterian),and plenty of fresh fruit drinks as well.Including carrot juice (zion juice), pawpaw, freshly homemade punches, etc....Being a cook myself I must say that i was impressed by the context.These receipies are more or less like Cousines rather then just ordinary Vegeterian food.One can make good use from it. This is a wonderful resource for those who are unfamiliar with Haitian cuisine and those of us who did not watch our Haitian mothers in the kitchen.Each dish's name is accompanied by its Creole, French and English name.I found this to be extremely helpful. I love the introductory paragraphs at the beginning of some recipes, explaining the history and/or meaning of the dishes.This definitely puts what you are cooking into perspective and makes the dishes more personal.My only criticism is the lack of photos.A photo of a dish or two would have been an excellent visual, and I say this on behalf of those who are not familiar with Haitian cuisine.

Authentic Haitian recipes......gotta love it.Everytime I want to get a home cooked meal, I go cheaper than traveling back home to NY, and cook up a recipe from this book.The author has done an excellent job of researching authentic ingredients and following the recipes my family have also created over the years.This is a collector's item for me, no other cookbook rates higher for Haitian cooking.My sister has been begging me to get her a copy for years, maybe I should finally buy one for her!

This is a beautiful book!It not only covers the cultures of many of the Caribbean islands, with beautiful full color photographs and text, but it has a multitude of authentic Caribbean recipes.It even has recipes to blend your own jerk or Caribbean curry seasonings. I would highly recommend this book to anyone who loves the Caribbean.

OK that was just the title. Really and truly of COURSE you should visit the Caribbean - at every opportunity you get but in all honesty this is the BEST Caribbean cookbook to be published. This book gives you a peak into the kitchen of every Caribbean island. The recipies are authentic, the flavours are phenomenal, and it will make you miss "home".You know that family recipe that your aunt or grandfather won't give you?...it just may be in there!

I actually stubbled across this book at the Sangster Airport in Montego Bay Jamaica.After reading about Virginia Burke at the back of the book I realized that she also grew up in the same district as I did in Walkerswood JA. Now that I have a personal connection to this book I was more than eager to begin to try some of the recipes.

The colorful cover caught my eye, but it's the creative and easy-to-prepare recipes inside that keep me coming back to this book regularly.This cookbook goes way beyond jerk, or adding a little pineapple or coconut to a dish.Author Virginia Burke is true to the cultural origins of dishes and the recipes are presented in an easy-to-understand and unpretentious manner.To my surprise, finding the ingredients in the U.S. has been quite managable.I have seen this author on TV once, and think she deserves a cooking show of her own.How fun it would be to take a weekly culinary trip through the islands with Virginia Burke.

I actually picked up this book in St. Maarten at the hotel gift shop and immediately began cooking from it!98% of the ingredients are available in your regular grocery store, a few specialty type items you can get at a gourmet store in your town or on the net.There are also sections within the book that speak to the Caribbean traditions and traditions of the meals and ingredients.Also - each recipe tells you from what Caribbean island it hails from.The recipes are easy to make and totally caribbean and incredibly awesome!So much so that I'm here on Amazon ordering one for my Dad for Fathers Day.If you like to cook - you'll love this book.If you don't like to cook, you'll love it even more because it is a great intro into cooking with dishes you won't be able to mess up!Enjoy!! ... I live in Kansas and am very familiar with Mexican cuisine, my boyfriend is from New york City and grew up with Puerto Rican cuisine at home, he has asked me for years to make different things for him, things his mother made (I quickly discovered Mexican food was not similar at all, besides I am not Mexican, a homestyle meal for me would have mashed potatoes and gravy, Roast beef and green beans). She makes her recipes from memory and has not been a good resource, this book has all of the foods that remind him of home, things that he considers traditional. The recipes are titled in English and Spanish so I can search the book for a recipe that sounds similar to what he has described and he can see the title in Spanish and knows exactly what it is.There are recipes for Traditinal Chicken and Rice, Pasteles, Fried pork chops and Salchichas con Arroz.All things he missed very much I can hardly keep him out of the food before it is done.There are also recipes which appeal to me that include fruit and tend to be lighter dishes that sound more Caribbean to me.At the very beginning of this book there is a section covering the Puerto Rican pantry that describes exotic ingredients and gives recipes to make many of them if you cannot find them in the store and substitution ideas.When I first bought this book I had a very hard time finding the ingredients, I have since become familiar with the Mexican markets that carry many of the specialty items and discovered the Asian market has been a very important resource. I may not always enjoy the traditional food but he insists that it tastes almost as good as his mother's so the author definitely used traditional flavors and recipes and added some updated ones to appeal to a wider audience, we've both been happy with this book it was an invaluable find.

I did not like this cookbook at all. I own a few "Puerto Rican" cookbooks and this cookbook can't compare to the others I have. The recipes were nothing spectacular. I was greatly disappointed when I read the different recipes. Too say the least this cookbook is nothing to write home about.
