Yea, Daisy....do your "thang"...as a Latina who cooks the typical Latin cuisine, I found myself wanting to try out her recipes after watching her show.Daisy puts her stamp on her recipes because she has a flair that can be found in her genuine love for culture and food.I stocked up on her "Top Ten Hits" and my kitchen has been rocking!I highly recommend this book, the instructions are clear, the pictures are mouth-watering, and the stories are endearing.I only wish they add more shows to the network.Oh yea.... when you buy this book, try the Carne Mechada (Puerto Rican Pot Roast) with the Roasted Garlic String Beans Your kitchen will sing with all of the wonderful smells and your family will thank you!

This cookbook is excellent.Daisy captured the essence of latin cuisine.Not only did she share numerous authentic Puerto Rican recipes, but she also presented recipes that reflected other latin influences.This is a very diverse cookbook.The recipes are easy to follow and fun to make.I highly recommend this book.

I love watching Daisy cook!I actually smashed and fried plantains for the first time after watching her show. I just bought this book today and have yet to cook from it (hence holding off on the 5th star) but this is what I was looking for in a South American cookbook.While others may give a brief intro about a dish, Ms. Kijac gives several pages of history and background that really helps one understand this cuisine.The book is so well-researched that one can see it was truly a labor of love.The food glossary is a big bonus!My only criticism is that each recipe is not associated with its country of origin.

As the daughter of Cuban parents, I grew up in a completely Cuban home in the middle of Queens, NY. While these recipes are wonderful and helped me introduce my Non-Cuban husband and children to the wonders of a home-cooked Cuban meal, the descriptions at the beginning of each chapter did get a bit nauseating. ENOUGH about how her family was of the high aristocracy!! Get to the recipes, already!! The chicken and rice recipe is fabulous and a huge hit with everyone I have made it for - excellent for a pot luck or large buffet lunch or dinner. Enjoy and happy cooking!!

GREAT BOOK! As a Cuban-American, growing up eating only Cuban meals until my teens, I found the recipes exact or nearly exact to those of my Abeula and Tias. Since moving away from family and marrying a German-American husband (who enjoys all Cuban dishes that I make) some recipes were forgotten. I was given this book as a christmas present and now I am able to repeat those dishes that I had not learned.Easy to read and the stories are precious.

I am married to a Peruvian and wanted to give him (and other peruvian family and friends) a taste of home.I found this book at the library several years ago and my peruvian cooking has gotten positive reviews ever since (with the exception of a few personal errors by the cook).We especially like the chupe de camarones.I would recommend this book to anyone who is interested in Peruvian food.

My wife is from northern Peru, and she introduced me to Peruvian cuisine. Everyone I know who has been to Peru says it has the world's greatest food, and I agree. I've asked cooks in Peru to teach me the recipes: they don't use cookbooks and they don't measure anything: it is all by sight. If you can go to Peru and learn first hand, do that. If you can't, then get this book. The recipes here are much much better than other South American cookbooks I've tried. I don't know that you'll ever be able to match some Peruvian meals without building your own boat and net, surfing the waves, catching the fish, selecting limes by hand in the market, raising the duck in the backyard, digging potatoes from the Peruvian desert, etc. This is still a great book, and I've even given it as a gift to Peruvian friends.

When my son and I went to Peru on vacation a couple of years ago, we fell in love with Peruvian food. With this book you can make a pretty good stab at capturing the tastes of the area--assuming you are able to find the ingredients. Fortunately, many communities now have markets that specialize in items from South and Central America. My favorite recipes are: 1) Ceviche de pescado, fresh fish "cooked" in lime juice. We decided we needed some Puerto Rican cookbooks in the house, and Puerto Rican Cuisine is one of them.It really looks like all our abuelitas worked on this great cookbook with Rivera.Quite a few recipes brought tears to my eyes since I haven't eaten them in over six years since my great-grandmother died.We look forward to recreating many of her dishes with the assistance of this book.If you want a simple, authentic Puerto Rican cookbook, this is for your culinary library.

i stood in line for hours to get this book as soon as it was released, and boy was it worth it. i only eat stuff in this book for breakfast, lunch dinner and snack. i have lost 154 pounds over 2 years and have a new confidence in life. my favorite recipe is for the fried cheese and potatos. its so healthy it just melts in your teeth and falls out and onto the floor and then you say 'oh crap not this again' and then you have to go out and buy a mop and clean it up but it sure tastes good!

This book contains the recipes for some of your favorite dishes fron CHA CHA CHA on Haight street in San Francisco. It would make a great basis for a tapas party! While nothing can beat the real thing, this book does a great job of giving you a headstart on creating your own home version of CHA CHA CHA. However, while these recipes are awesome, most are not for the novice cook. They work best for individual who have experience with the unique caribbean ingredients and experience with the cooking technigues (quick sauteeing with cream!)Overall...I would say that 1/3 of the recipes can be made by anyone...1/3 with a little experience and 1/3 by the dedicated gourment.

`Delicioso!' and `Paella!' are leading Spanish cuisine writer Penelope Casas' latest books, following her similar pair, `Tapas' and `The Food and Wine of Spain'. In many ways, the later books are more similar to one another than they are to the earlier books. Both concentrate on regional cuisines. While the paella is certainly made throughout Spain, the dish originated in Valencia with many other rice dishes, described in `Delicioso!' as `region of the rices'.

I live in Kansas and am very familiar with Mexican cuisine, my boyfriend is from New york City and grew up with Puerto Rican cuisine at home, he has asked me for years to make different things for him, things his mother made (I quickly discovered Mexican food was not similar at all, besides I am not Mexican, a homestyle meal for me would have mashed potatoes and gravy, Roast beef and green beans). She makes her recipes from memory and has not been a good resource, this book has all of the foods that remind him of home, things that he considers traditional. The recipes are titled in English and Spanish so I can search the book for a recipe that sounds similar to what he has described and he can see the title in Spanish and knows exactly what it is.There are recipes for Traditinal Chicken and Rice, Pasteles, Fried pork chops and Salchichas con Arroz.All things he missed very much I can hardly keep him out of the food before it is done.There are also recipes which appeal to me that include fruit and tend to be lighter dishes that sound more Caribbean to me.At the very beginning of this book there is a section covering the Puerto Rican pantry that describes exotic ingredients and gives recipes to make many of them if you cannot find them in the store and substitution ideas.When I first bought this book I had a very hard time finding the ingredients, I have since become familiar with the Mexican markets that carry many of the specialty items and discovered the Asian market has been a very important resource. I may not always enjoy the traditional food but he insists that it tastes almost as good as his mother's so the author definitely used traditional flavors and recipes and added some updated ones to appeal to a wider audience, we've both been happy with this book it was an invaluable find.

I did not like this cookbook at all. I own a few "Puerto Rican" cookbooks and this cookbook can't compare to the others I have. The recipes were nothing spectacular. I was greatly disappointed when I read the different recipes. Too say the least this cookbook is nothing to write home about.

This cookbook was a christmas gift from my peruvian husband. He has been pleasantly surprised by many of the regional recipes that can be found in this book. However, the author does leave elements of some recipes out..and he does have some ingredient amounts wrong. If you have a peruvian in the house or are familiar with peruvian cuisine I would recommend this book, we have thoroughly enjoyed many of the recipes..but only because we can catch many of the author's mistakes.

I love Peruvian food, and have been to nearly every Peruvian restaurant in NYC.So, when this book came out, I was ecstatic.However, the cookbook is no good.I made several recipes several times, and they never came outtasting very good.For example Chupe de Camarones.I've had some awesomePeruvian shrimp soup in the restaurant.However, even though I got to knowmy local fishstore well in the process of making my own stock for the threeattempts at this soup, and even though I tried the different version, theresult was consistently dissappointing. I'm a timid cook and hate to travel--but I bought this book.Go figure. I've tried several recipes and they've turned out great. Even though there are many recipes for meat dishes, if one doesn't eat meat, there is still a lot to choose from...side dishes, fruits, desserts.Good chicken and Fish dishes.Lots of very interesting information about the distinct regions of this land and about how their regional cuisine is influenced by indigenous and European traditions.Fascinating!

This book has traditional recipes from every country in Latin America.Each recipe explains the techniques used to reduce the fat and calories while retaining the flavor and texture.Nutritional data is provided for each recipe.To make crisp empanadas without deep-fat frying, he "bake-fries" the meat pies in the oven with only a small amount of oil.His healthy guacamole replaces some of the high-fat avocado with tomatillos.To make a healthier flan, he uses lower-fat dairy products.There are incredibly satisfying recipes like Mexican Hot Chocolate, Huevos Rancheros, Roast Pork, Beef Fajitas, Roasted Spiced Chicken, and Nicaraguan Tres Leches Cake.This is a great book to combine the fantastic flavors of traditional Latin food with contemporary methods for healthy, convenient cooking. ... I recently received this book. I wanted it because I have recently returned from Brazil.I do enjoy this book, but I find that the majority of the foods come from the northern part of the country, which is heavily influenced by the sea and past African herritage.I spent the majority of time in the South and Western part, therefore many of the dishes are not known to me. It does have instructions as how to prepare the every popular Kale and beans..which seem to be the staple food of Brazil.I like the photos, but the book could have used a lot more...it is nice to see what the dish is supposed to look like.It provided a nice list of ingrediends and substitutions if the native ingredients weren't available in your area.Instructions are easy to understand.I am anxious to try the foods, including those I know nothing of...I like the book, but I wouldn't pay more than 15 dollars for it. Luckily, I bought it used for much less.

This excellent little volume is a welcome addition to the Central American cooking scene because it's the first of its kind and has such fool-proof recipes.I had no trouble at all in preparing bu�uelos and other desserts unique to Nicaraguan coking, not to mention the great main courses such as vaho (steamed vegetables with beef) and the classical yucca and pork-skin appetizer, vig�ron. Highly recommended!

I bought this book after my first year living in Brazil and I have to say, that it's beautiful.The photos are incredible and just make you want to make everything in it.

Like other reviewers, I was bowled over by the fantastic photos throughout this book. They are really beautiful and take me back to the year I spent in Brazil. My problem with the book is simple: There is no way anyone actually cooked by the majority of these recipies!! Ingredient amounts don't make sense, bowl and dish sizes don't make sense, cooking times don't make sense. Let me give one of the more egregious examples: In the recipie for Bolo de Aipim, the author proposes putting 2 pounds manioc root, 2 cups sugar, 4 eggs, 2 cups milk, and 2 cups coconut milk into a 9"x13" pan. These ingredients wouldn't fit into a pan twice that size! In addition, there is way, way too much liquid. This cake would take over an hour to firm up, not the 30 minutes he recommends. This is just one of dozens of examples.Read more
