I love this guy, he taught me everything I need to know about cooking.My husband is hispanic and he says my mexican food is better than some of his family members, especially my salsas.Rick is great and I love his TV show on pbs-- his book has great authenic recipes that everyone will love.

James Beard Award-winner Bayless approaches everyday cooking with two goals - easy preparation and nutritional balance, with an emphasis on one-dish meals. He omits complex traditional moles except for a simpler Oaxacan yellow made with masa harina and tomatoes and he frontloads the book with salads and sides, like Green Bean Salad with Red Onion and a salsa dressing or a Sweet Potato Salad with Caramelized Onions and a red chile vinaigrette.

I am of Mexican descent and I don't even know most of the recipes, I don't even cook this good with delicious being extra.Rick is so knowledgeable, you would think he was mexican.I have tried so many of his recipes, and they are all mouth watering.Mexico should get real and give him citizenship because he truly represents the best of mexican cooking.

We've had some great meals since we bought this book. Bayless writes about Mexican food the way John Muir writes about nature, and I am happy to report the meals my wife has made have lived up to the description. We've lived and traveled extensively in Mexico and can report that this is authentic stuff, and quite a bit better than what you'll find in an American Mexican restaraunt. We went to one such restaraunt near Plaistow, New Hampshire where they charged extra for a side of salsa. That was bleak. We needed a book like this. Most of these meals do take time to make. He doesn't do things the easy way. While in Mexico we rent a cheap apartment without an oven, most of the local people we know don't have ovens so it is surprising many of these recipes are for the oven. But that's been our only problem with the book. He has strong opinions and we may not always agree but thats OK. Even has a page in the back listing websites to get hard to find Mexican ingredients. The recipes are great, but you need to be careful because of what may be publishers errors. I made the "Red Chile Braised Chicken with potatoes & greens" (p314). While preparing it, I noticed there was nothing in the "Essential Sweet-and-Spicy Ancho Seasoning Paste" to make it sweet. I checked another recipe (one of our FAVORITES), the "Chile Glazed Country Ribs" (p380) and saw it contained sugar & honey. I added sugar & honey, adjusting for volume and made a great sweet & spicy seasoning. Definitely try this book for great tasting meals.

This was my first Mexican cookbook.My husband and I love Mexican food, and I decided to see whether I could learn how to make some of the tasty dishes myself as opposed to buying pre-packaged mixes and salsas in a jar.1000 Mexican Recipes was a fortunate choice!I learned the basics in the first chapters, and this gave me the confidence to try the main dishes.Wow!I was amazed at the difference it made to use some fresh ingredients and cook them properly for best results.

Once again Marilyn Tausend does not disappoint!I own the Spanish edition of this book and have given the English edition to friends visiting Mexico and wanted a "real authentic Mexican cuisine" cookbook.She does a great job on explaining the traditions and festivities that go hand-in-hand with a lot of foods in Mexico.The Christmas punch is a family favorite served annually at our Posadas and Christmas meals.(Recipe tip:remove the seeds from the Guavaba fruit before adding to the punch.)

This book is a wonderful followup to her collaborative work "Mexico The Beautiful". I was afraid that many of the wonderfully authentic recipes from her other books might be duplicated here, but that's not the case. As usual, she's managed to come up with very authentic recipes (I have lived in Mexico for many years now and have studied the cuisines) that I had been hoping to find, such as Quail in Rose Petal Sauce of "Like Water For Chocolate" fame, Cream of Chile Poblano, and Torta Azteca, among others. The instructions are easy to understand, the photography is brilliant, the ingredients are relatively easy to find and Ms. Tausend again did her research right because these recipes taste like the real thing! This is not another taco/enchilada/burrito cookbook, there are many truly fascinating and hard-to-find dishes in this book. I'm so glad I bought it! If you're looking for another great Mexican cooking aid, this is the one to get after Mexico the Beautiful!

I live in Southern California surrounded by countless Mexican Restaurants of all levels of quality. Sadly most are sub par greasy cheese and dry rice joints. I've never used a book that produced meals that get more compliments from my Dallasite friends or Houston in-laws (and that's no easy feat as they are Tex-Mex experts). Matt's recipes are much simpler than those I've tried from other cookbooks while producing the same or superior results without having to soak chilies, grind them in a blender, etc. I may have to tweak flavorings some (hence 4 stars instead of 5) but the techniques and overall results can't be beat. As to how many recipes a person will use from any given cookbook ... well, in Dallas we eat a lot of this kind of food and I consider the money well spent.

Even though Tex-Mex food is on every nutrionist's "Index of Forbidden Cuisines," I love the stuff. I ordered this book prepared to like it; and,overall, I'm glad I've got it. I love this book. The author brings enormous experience from her own highly beloved tamalaria in S. Calif. and makes it possible to create excellent tamales on your own. Not as easy a subject as it might seem. I found her presentation thoughtful, with clear, thorough explanations and instructions that are well-presented. Her detailed description of the different types of masa and masa prep., of tamale wrappers and wrapping techniques, of ratio of filling to masa, of the tradition versus popular taste in saucing tamales, of all matters related to general preparation, cooking, storing etc. are all excellent, especially considering that it is a rather small book. Unlike another tamale book out now by a famous chef, these recipes are down to earth and wonderful, and span a wide range of tamales...including adaptations for vegetarians, special occasion tamales and much more. Great sauce recipes. Different versions of many recipes (such as mole sauces, chicken tamales, and much more). The author has a nice personable style, sharing customs andher own family lore along with her valuable insights from running a tamaleria in a trendy So. Cal beach town...and that is a really daunting challenge: to appeal to everything from a large solid Mexicano population to surfers to L.A.'s celeb-types etc. etc.

I am an experienced cook and baker,and followed the recipe for Masa Harina Masa.I bought the correct dry corn flour from an hispanic market, and made some excellent chicken stock.The ingredients list called for 12 cups of the corn flour and 7 cups of stock, mixed in a stand mixer with the paddle attachment.and when I placed these ingredients in the mixer and turned it on, it was too much for the mixer to hold.I emptied out the contents of the bowl into another bowl, mixed the contents with my hands to distribute the stock and corn flour evenly, and returned half of the ingredients to the mixer bowl and began to mix.The mixture never reached the "firm pudding" stage as described in the recipe.I had to add more than an additional 4 cups of stock to get to this stage.I don't think the author carefully measured the ingredients when she recorded the recipes.Since this is a recipe that many people will make (the masa is the main part of a tamale) she should have been more careful.However, when I made the Red Pork Chile Tamales the sauce was delicous and my family liked the flavor and texture of the tamales.

This is a very good cookbook, but it requires building a pantry full of intersecting recipes/prepared bases vitally important to creating end result dishes in this book. To attempt to do it all from the ground up, virtually at ground zero would take you days to complete an entire/full meal setting. (Something to consider when purchasing this book.)

The fresh-Mex recipes in this cookbook are about the best I've ever found. The Guacamole recipe is fantastic and everything from fish tacos to carnitas is mouth-watering good. It requires a little more prep time to cook with all fresh ingredients instead of prepared or canned foods but is well worth it as the end results are delicious. Having been an early fan of Jane and Michael Stern, it is disappointing to see that they've simply "copied" (not quite the right word, but it suffices) another and better book, while leaving out the better parts.Face it, the full title of this book is "The Flores Family's El Charro Cafe Cookbook"..."with recipes by Carlotta Flores", and that book is available here at amazon.com.The Stern derivative simply reorganizes the order of the recipes in Sra. Flores' book and omits most of the "notitas" and cultural material.

I am a Tucson Native far from home (living in Japan) and although I have not read the book, I can certainly say that El Charro's is great Mexican food! Whenever we go home it's a sure stop. I just finished ordering the book, can't wait til it arrives!

I have eaten at El Charro in Tucson, and the food is fantastic.I spent some time looking at this book and plan to buy it.I was concerned that the book wouldn't clearly indicate how the food got to be some darn good.In other words, the recipes wouldn't have anything out of the ordinary--the secret was in the kitchen staff's know-how.Thankfully, these recipes have some obvious differences from typical Mexican cookbook recipes.For example, El Charro uses tons of garlic--they blend it with water to make a puree that finds its way into most of their recipes.I'm certain this "garlic dosing" contributes to their greatness.Another item that caught my eye is the use of condensed milk in their refried beans--I've never seen that before.Having eaten them I can say it works!Last point: make sure you try the barbacoa recipe.El Charro's barbacoa enchiladas were so delicious I nearly fell off my chair in the dining room.They use pickling spice in the recipe--another gem.The food is great....and the book is different enough to warrant adding this to the shelf next to Rick Bayless and Diana Kennedy. ... Of of the few, rare, authentic looks at some exceptionally wonderful food. The book is beautiful, and enhances the feel for understanding the landscape and people that authentic south Texas ranch cooking comes from. Thank God Melissa is secure enough in tradition that she did not feel the need to throw Mangos in everything to prove she was a creative chef. I have pet goats that were adopted as orphans, and they are very sweet and loving, so I no longer eat Cabrito, but have had it enough in the past to appreciate the recipes.
