This is a "must have" cookbook if you'd like to prepare authentic Native American food. The ingredients are easy to find in any well stocked grocery store, and the recipes are not difficult. No "weird" ethnic foods here- just good meals made with what's available. The historical background for the foods of different tribes is an interesting read. The photographs and drawings are absolutely beautiful- those alone are good reasons to purchase this book!

The photography is unbelievable and the recipes work! The book gives us a palatable way to enjoy the true native american way of cooking. The recipes are quite good.I would like to weigh in, however, on the issue of the 'traditionality' of the various dishes included here.An earlier reviewer mentioned that the recipes 'are only traditional in a pan-American sense', but I would differ with that characterization.First, a good number of the recipes call for nothing more than what would have been available to the particular tribes in question in pre-Columbian times.Only some of the recipes include ingredients originally from Central & South America & elsewhere.But further, I wonder whether it is in fact wrong to call the dishes that *do* include ingredients from afar traditional.Using this criterion one would have to count out tomato-based sauces as part of Italian culinary tradition, for instance, or for that matter Italian noodles, the making of which was learned from China.Most if not all of the dishes probably represent traditional Indian cookery in one form or another, whether traditions pre-existing the arrival of Europeans or arising afterwards.But it is worthwhile noting that some of these dishes likely came into being later than others, as the earlier reviewer took pains to do.

A fun book, but the recipes are only traditional in a pan-american sense.In other words, before the arrival of Europeans, north american indians didn't have potatoes, apples, avocados, honey, etc.If you are interested in north american indian tradition/history, this book will probably disappoint.

This cookbook is a wonderful source of knowledge in addition to recipes.The recipes are easy to follow and many are delicious.Even my children who are at times picky eaters enjoyed tasting and helping prepare the recipes.We used the book as a resource while doing a research paper on Iroquios food. I work for Chef Divina, and we make a lot of the dishes from this book in the restaurant.The Wild Rice and Corn Fritters are a huge hit. Also the Huckleberry Sorbet is to die for!He wrote this book with his wife, they also won a James Beard Award for this book as well.This chef is awesome to work with and someone I look up to and hope to be like.

I love this book for the history and recipe authenticity.To capture the true flavor, sometimes you need to start with an original recipe and modernize to one's tastes rather than work with some of the neo-soulfood recipes.

It's not so much for the recipes that I am buying this cookbook. There are some fabulous recipes in here - the waterwhip pie crust, corn pancakes, glorified shrimp- but many of the preparations are not to modern taste or use ingredients that are dated (suet, lard, palm oil). No, the fascinating part of this little treasure is the history that binds it together. Not only is it snapshot of the 1950's, with its aspics and community suppers, and surprising reliance on convenience products of the time, but the African American history it preserves is precious in its own right. The pages on Robert Smalls alone are worth owning this book. The index needs work and the user guide recipe updates for modern use should have been included at the end of every recipe instead of burying them in a chapter at the back of the book, but after reading thru this once as a novel, I am ready to use it as an actual cookbook. But as a record of Black history thru the year, it is priceless.

I adore this cookbook! Spiral-bound, lie-flat pages; many gorgeous color photographs of the baked goods as well as historical photographs of cowboys cooking and eating; and a great layout are just the beginning. Every singlerecipe has a several-paragraph commentary about how the recipe came intobeing or the differences between the original Old West and updated recipes.Scattered throughout the book are features on various topics such ascooking equipment in the Old West, chuck wagons, and availability and useof various foods. I also enjoyed the uniqueness of the recipes. Neverbefore have I seen recipes for green tomato pie, gems (similar to muffins),or spotted pup (a pudding). However, the book doesn't neglect more commonfare such as sourdough bread, cherry cobbler, bread pudding, biscuits, etc.Additional features include an Old West cooking dictionary, a comprehensiveindex, and a bibliography of books about food and life in the Old West. I love this book. I dont know much about herbs but this book is very well written and informative. He gives a cure for almost every ailment and shows you how to look at a plant to determine its usage by its shape. My son that I homeschool loves to learn about all the usages of the plants, like cattails being used to make pancakes and clubhouses. I would purchase this book above any other, only because you can't find this information anywhere else. The only request I have of the author is to add more illustratoins of all plants discussed, so the ignorant (such as myself) know what to look for out in the wild.
