I have previously read many of Rachel Ray's cook books and had always wished there was one with more vegetarian recipes. Well, this one is just that. Simple, 30 minute meals that taste great and are easy to make.

I've made several dishes from this book, but I have to say a lot of them are so similar that it's not like a new recipe. I'm a big fan of RR's cook books, and granted this is one of her earlier ones. Her other cook books don't have many vegitarian meal- she loves her meat. So, this was a great idea. As she says in the beginning that her fans asked her to make it, and that's what she did. Some friends had referenced some recipes and ideas from this book, so I got a copy.I'm totally underwhelmed.The attitude and tone of the book, starting with the pergorative "Diet Dictocrats" put me off to anything good that may have been found within it.

This book has some definite plusses and minuses.Some of the information and recommendations in it are extremely well-documented.Others are not well-documented, and some are just generally suspect.(The author says we should all be eating raw meat regularly, and doesn't even address issues of e. coli or salmonella.She also recommends soaking all fruits and vegetables in bleach water prior to eating them, although chlorine is a known carcinogen.)

Sally Fallon's cookbook scores high in the 'educational' department. Not content with providing healthy recipes, the book's introduction and ingredient "side notes" are a full text within themselves. And I applaud her taking a stand against conventional nutritional wisdom, which I have found - for my body - to be a recipe for disaster.

I've tried them all, every diet that is. Not only have I tried a lot of diets to lose weight, I've also worked with other books on eating to control inflammation. This is a great approach. I feel and look the best I've felt in years. The proof has been in testing the foods in my own body. I feel MUCH better and I'm finally losing weight after 2 years of chronic fatique and puzzling weight-gain in spite of eating a healthy diet and taking a lot of the right supplements. You can use the tables to change your current eating and food purchasing habits if following the diet plan isn't for you. That's what I did and it worked like a charm. I own a fitness club and am very familiar with everything out there. This is a gem. Buy it and use it. Eliminate the more inflammatory foods you currently eat and spike your diet with powerful anti-inflammatory foods and see what happens!

I purchased this book because I knew that inflammation theory has a lot of credibility with Andrew Weil and some others in the medical community at present.A limitation of the book is that the reader is not told in any detail how the inflammation index that is so central to the plan is derived.Taking it on faith, I tried it and it did reveal some things: for example, a personal preference for fruit and whole-grains over vegetables that almost certainly was not an entirely good thing. It does give you a way to quantify those kinds of things, and it would be hard to imagine how it could be misused unless someone tried to slather huge quantities of anti-inflammatory curry and ginger on top of an unhealthy diet.All in all, a provocative book that doesn't contradict common-sense good principles of diet and will likely improve your diet and make you healthier if you take the trouble to do the math. Also, the recipes are good.

This book offers up sound dietary advice.Foods are rated according to a formula that predicts how inflammatory they are to your body.The formula is not specified, although the factors that are considered are listed.I would have liked more information as to how much weight was given to the various nutrients and why. Information not contained in the USDA food database wasn't included in the formula.Therefore, a number of factors, such micronutrients, pesticide residues, etc. are not addressed. The inflammatory effects of eating charbroiled foods or deep fried foods are not discussed. This is an interesting attempt at quantifying the anti-inflammatory and inflammatory qualities of most common foods, and for the most part is quite helpful. ... Read more

5-0 out of 5 stars Cleansing diet eliminates food addictions.
The Rice Diet Solution makes this excellent program completely accessible and it is working remarkably well for me. I've been sitting on 60 extra pounds for abut 10 years. Fad dieting brought instant but temporary results once I returned to eating 'normal' foods made addictive by sodium, fats and sugar. Once I accomplishedthe initial cleansing phase of low sodium and no sugar and, most importantly, no processed foods, my addictions vanished and the weight continues to peel off. I lost half of my goal in two months. I now prefer salad to pizza and won't touch meat. I eat three high nutrition, high fiber, fresh meals day, which prohibits hunger and keeps the calories low. The exercise part is easy! I just gave up my car and walk and take public transit. I'm saving money and stopped my daily contributions of packaging and plastic to the landfill. The book is a guideline to a new way of life that continues to nurture my spirit and redefine my presence and participation in the world.

In the first few pages you are told everything you need to know to understand the diet part of this plan. Without even finishing the book, I jumped right in and started and immediately started losing weight! It is so simple, easy and FILLING. If you love fresh vegetables and fruit and can curb your sodium intake, you too should see immedialte results. The rest of the book gives you the nutritional explaination of the healthfulness of the plan (as a health care professional this is something important to me) and advice on lifestyle changes such as taking time for yourself. Easy to read and understand and follow.

While I certainly agree with previous reviewers that Cornbleet's recipes make some fantastic dishes (I like her chocolate mousse far better than the dairy-laden original), confirmed raw foodists should be forewarned that many of Cornbleet's recipes include non-raw ingredients. While an experienced "rawie" will know, for instance, that maple syrup is not raw, someone new to raw foodism may not. Unfortunately, detailed and informative though Cornbleet's directions and auxiliary information are, she often doesn't identify cooked ingredients when calling for them in recipes. Had she done a better job identifying cooked ingredients and perhaps suggesting raw alternatives, I'd rate this book a 5++ without a doubt. It's a superb transitional book, however, or a great choice for someone such as I've become who merely wants to eat varied raw meals more often.

I started eating raw four months ago, have lost 22 pounds and feel great!Eating raw is a challenge, but this wonderful book really does help to make it easy.I use recipes from it at least a few times a week - the ingredients are readily available, the instructions are simple and the results are delicious!In addition, this book has been a great source of information and inspiration for me in making the switch to a raw diet.I admire Jenny Cornbleet's determination and commitment to helping others learn raw food and hope that she has more raw recipe books in the works!

She provides quick references to all recipes (which are all easy to make and don't rely on obscure foods.) She will also teach you raw food preparation and how to plan menus that take more time planning than they do preparing. (In other words, her recipes are quick and easy to prepare:-)

Eat less calories and burn more of them through exercising.It sounds simple, but it's not easy to do.So I turned to South Beach diet. I've found this to be a very practical diet. After the initial first two weeks (the strictest) I've lost about 5 pounds. I have to admit I am not a fan of "light" cooking or the manymagazines out there; I am also a huge fan of the whole "Cooks Illustrated" books and magazine, so I loved this book. Most low fat and/or low calorie recipes rely on "light" or artifical products to cut calories.This book does not, it adheres to the high standard of Cook's Illustrated recipes. The recipes are not the most low fat or calorie possible, but each is delicious and most importantly works like they say it will. This is also the first oftheir books to provide full nutritional counts.There are the usual detailed explanations of what works and what doesn't so you know exactly why this recipe is going to work.Everything I've tried has been fabulous.

So far, I've enjoyed every recipe I've tried in the book. Low-fat blueberry muffins to me taste even better than the original, because they're less greasy. And they're vastly improved from the hockey puck, low-fat muffins I've made in the past. You'll often have to do a little extra work with the recipes -- this is from Cook's Illustrated, after all, not Betty Crocker. Victoria Boutenko is a revolutionary. Like those who have come before her and those who will follow, it is not an easy path, nor will everyone see the truth in what she espouses. However, it is essential to to read this book (and her others if you wish to have a comprehensive view) to begin to understand how our food choices affect not only our health, but our surroundings as well. I was in a natural food store this morning in Eugene, Oregon and was delighted to see this title as well as many of her others above the shelf in the living food section of the store. 12 Steps is an important piece of the literature that is finally becoming available to the masses, shedding light on how to be healthy, prevent illness, and be a part of the sustainable movement that is necessary if we are to continue to inhabit this earth.

I am relatively new at being (mostly) "raw." For the past couple of months I've been exploring raw foods, trying out different books, online sources, etc (and feeling quite healthy, by the way). Juliano certainly has his niche in this raw world, but he's not for everyone. He is a colorful, flamboyant personality with a passion for raw foods, and his enthusiasm is infectious. I love his writing style, and I think he'd be a blast at a party. BUT this "uncook book" is not for beginners, nor "real" people who want fast, simple, do-able recipes. He's a restauranteur, hence the foods he makes need to be flashy. They take MANY ingredients (many of them are exotic, hard to find, hard to pronounce!), lots of prep time, and while I have certainly enjoyed reading this gorgeous, glossy book (which I got from the library), I am not finding myself making too many of these recipes. Just too difficult. When I look at a recipe that takes 14 ingredients (and serves 2) I'm just not gonna make it... I would, however, love to visit his restaurant next time I'm in California!

I bought this book because my husband's best friend is diabetic. Every time I had them over for dinner he'd never be able to have dessert. We'd all eat and he'd watch. I felt really bad and needed a plan B, and this book was it. Now we can all have dessert the healthy way. I no longer use my other dessert books that are loaded with sugars. Great book, I absolutely love and recommend it!!!!

The title says it all. This is one of the most fantastic cookbooks out there. Written by a nutritionist, it features over 75 low-sugar, low-fat recipes with satisfying portion sizes and a delicious taste. The book has recipes for hot and cold beverages, breakfast treats, pies and cobblers, cookies, cakes, puddings, and more. Furthermore, the author explains how she came up with the recipes, so you can easily adapt your own. Splenda and simple lower-fat substitutions let you satisfy your sweet tooth without sacrificing yourself. Each recipe includes nutritional information, including the diabetic exchange plan. However, while this book is great for anyone watching their sugar and calorie intake, including diabetics, the recipes are not necessarily low carb and some sugar is occasionally called for (perhaps a couple of tablespoons or sugar, or in the form of chocolate). If you are already baking desserts with Splenda, then this cookbook, with its emphasis on healthy twists to traditional recipes, might not be so helpful. But if you are looking for melt-in-your-mouth inspiration, then check it out.

I've had this book for several years, and I reach for it all the time. Every single recipe I've ever made from it has turned out well, and most have been spectacular. Favorites: Pumpkin Pie, Banana Cake, and Bran Muffins. I think the author really knows her baking science, and clearly has tested and retested every recipe.

If you're a fan of WW, you should love this book.It was written before any of the POINTS systems, so you have to do some calculations on your own.The nutrition info is provided for each recipe.This book is an especially good value because as another reviewer noted, for each main recipe, you get additional recipes provide a day's worth of meals.

Way too many of the recipes in this book have ingredients I have never heard of!Also, the ingredient lists are often very long.I am donating my copy to the public library and will use "The Moms' Guide to Meal Makeovers" and "Quick Meals for Healthy Kids and Busy Parents" to help me provide sensible meals for my family.

This is my family's favorite cookbook.The recipes are fun and I haven't hit a dud yet.When I cook from it my family doesn't know I am cooking "light", they just think it is delicious. I bought this cookbook because I have "The Best of Cooking Light" and that one is fabulous. This cookbook has some great recipes, but not near enough pictures. This book also includes lots of additional information that I'm not too interested in but that might help other cooks.

This is one of the first allergy cookbooks that I purchased, and some of my family's favorite recipes are in it.My son is allergic to milk, egg, soy, peanuts, and tree nuts.We also avoid fish and shellfish.For people avoiding those allergens, this is a very good cookbook; however, there are some recipes that call for soy, fish, and shellfish.We either substitute in those recipes or do not use them.

My son is allergic to all Beans also (Legumes) and Beef so this book only had a few recipes I can use.The Wheat can be replaced with Bette Hagram's Featherlite recipe 1:1 if you can tolerate rice, corn, tapioca starch and potato flour. I'm a tough critic to please since my son's allergies include Dairy, Beef, Soy, Wheat, Peanuts, Treenuts, Gluten Grains, Legumes, Shellfish, Food Dyes, Curry spice, and Cumin.

As the mom of a picky food allergic child (eggs, milk, nuts), I am continually looking for new things to try.I found several good recipes - the waffles are a big hit in my house.Both cakes - the sugar vanilla cake and the white cake - also went over well.The egg replacement of baking powder, oil, and water seems to work very well in baked goods.I am looking forward to trying some of the muffin recipes.I do find the relatively small size of the book makes it hard to use while cooking. ... This book is delicious!There are excellent photos of both the dishes and the different areas and peoples of the Silk Road,The text is interesting, with information about history, cultures, cooking techniques, and food items.I appreciate that the recipes are not complicated or particularly labor-intensive.I have tried three so far, and all three were hits.I have a large collection of cookbooks, but if I had to start all over again, this one would be one of my first buys.

this is a beautiful book with somewhat complex recipes but educational. my friend borrowed it to use it in her geography class covering the silk road topic. the pictures are spectacular. it is classified as paperback but the quality of paper and print make it as durable and beautiful as a hardback. i strongly recommend this book not just for the wonderful recipes also to amuse your eyes. let your imaginations travel!!
