Betty Crocker is on the health bandwagon. Not one for fads, Betty sensibly bases this 175-recipe cookbook on the Food Guide Pyramid guidelines recommended by the American Heart Association and many other medical and nutrition professional organizations. You learn tips for cutting down on fat and cholesterol, understanding the different kinds of fat, and making smart food choices for heart health. The idea is to reduce fat by making ingredient substitutions and small alterations, but not making drastic changes. The recipes are varied and creative and don't resemble "diet food": Ginger Shrimp Kabobs, Vegetable Potstickers, Stuffed Veal Chops with Cider Sauce, Vegetable and Ham Jambalaya, Curried Chicken and Nectarines, Caribbean Fish Salad, and Thai Shrimp and Rice Noodle Nests. The desserts include Chocolate Swirl Cheesecake with Raspberry Topping (only 20 percent fat!), Blueberry-Lime Torte (about 15 percent fat), and Double Chocolate-Date Cake (about 25 percent fat). Recipes are labeled with symbols indicating "low-calorie," "low-fat," "moderate-fat," "low-cholesterol," and "moderate-cholesterol," so you can choose how far you want to go. Only a month ago was my huband, who is also diabetic, sent home from the Dr. and told me he had to lower his fats and cholesterol. Now I being a starch fanatic had no idea where to stsrt to change our diet. This cook book has given the basis on which to make healthier choices that are easy and tasty as well.

I have bought very few cookbooks over the past 40 years, but this one is a must have.The writing style is warm and friendly. I felt like a friend was in my kitchen guiding me into the world of healthful eating. Molly Siple makes nutrition understandable for the lay person and she gives great attention to the asthetic presentation of food. The author has actually made preparing low-cholesterol meals fun rather than labor intensive. It is now my first-choice book for meal planning.We are eating better and enjoying it.

Many of us make resolutions for the New Year.Some we keep and others are hard to stick to.I did not have a choice about lowering my cholesterol.I just didn't know how to go about it. After reading the positive reviews, I bought this book.The introduction said "a few" recipes contain date sugar.When I went to the section on cookies, I found that all but three of the cookies recipes contain date sugar...usually 1 to 1.5 cups!

I've tried three of the recipes so far. All have been received with much enthusiasm by my daughter, who must limit her intake of refined sugar. The ones I've really enjoyed so far have been the Apple pie and the Brownies. My daughter enjoyed the brownies so much that she wanted them made as a bithday cake. If the rest of the recipes in the book are this good, I would highly recommend this book.

When you are Dana Carpender and your entire writing career has been predicated on your reputation for being "that bestselling low-carb recipe book lady," then you can imagine the stunned surprise from people who bought her previous books when the title of her new book conspicuously omitted the word "low-carb" for the first time since she started writing cookbooks. Hmmm, that's strange!

I love Dana's previous cookbooks, so I had to buy this as soon as I saw it. I've never posted a review on amazon, but I love this book so much I had to. I spend evenings paging through it trying to decide which recipe to make next, out of all the delicious recipes. They are easy too. Some recipes even have a wide variety of ingredients, which I love. I am part of a CSA (community supported agriculture) and I get some of those ingredients in my weekly boxes (fennel, leeks, radicchio, etc).

I just bought the "Every Calorie Counts Cookbook", I was torn between the Low Carb Cookbook and this one, I am VERY pleased with this book. It is low carb--GOOD CARB and low fat.Dana starts the book with discussions on good fats, saturated vs unsatured, sweeteners, thickeners.. I have a Master's Degree in medicine and thought I was very knowlegable when it came to nutrition, but she really gave me a entirely new perspective when it comes to healthy fats, and I never knew of xanthan gum to thicken sauces as an alternate to the old corn starch.I have made several dishes out of her book and I must say DELICIOUS!!My boyfriend was quite impressed.The meals are surpisingly easy and quick to make, and the taste is superb.I've been blessed with a thin frame, but I am very concerned with eating healthy and low carb (most of the highly processed junk out there is why America is so obese).This cookbook is a great addition to every home.Thank you so much for this fabulous book!!I hope your book inspires more American's to eat healthy and to realize that it IS NOT difficult to eat healthy and fill your home with fruits and vegatables versus the packaged, processed junk out there.It saddens me to see so many obese children whose future will be one of diabetes, high blood pressure and heart disease if the parents don't change what they provide for their family to eat. This cookbook provides recipes for simple and tasty meals using dried beans that can be found in any grocery store. I have other bean cookbooks that call for exotic beans that are difficult to find. My only problem with this book is that half of the recipes call for bean flours that are not so easy to locate. Health and specialty food stores may have one or two types of bean flours such as soy but not all of them called for in this book. The only place I could find pinto bean flour (used in many of the recipes) was in online stores with high shipping charges. The author directs the reader to Bob's Red Mill in Oregon but their web site did not offer any bean flours which may not be available anymore. Because I really wanted to try many of the recipes and I was intrigued with using bean flours in cooking, I took the author's advice and bought a K-Tec Kitchen Mill to grind my beans at home. I am happy with it and I think the instant refried beans made with pinto bean flour is tasty and will be a money saver over time. The soups thickened with bean flours will also be a healthy and tasty way to eat. If you are not interested in searching for bean flours or grinding them at home you may want to look at other bean cookbooks before you purchase this one. Although, this cookbook would be helpful for those allergic to wheat because the recipes show how bean flours can replace products containing gluten.

When I bought this book I thought I was getting a simple living book about how to cook beans. I guess I should have read more about it in amazon, but it reminds me of 1960s hippy commune vegetarian cooking. Not what I had in mind. A lot of soy, tofu, honey and all that. I wish someone would write a book about plain cooking that uses beans and meat!

If you think you are buying a book with over 300 pages of recipes, save your money.Over 2/3 of the book is repeat advice about how to eat the "real age way".Along with this repeated information from Dr. Roizen's previous Real Age books is "silly" advice ranging from what kitchen utensils will increase your kitchen IQ along with how and when to buy produce.

I love Dr. Roizen, and Dr. Oz, who both have appeared on Oprah many times.Their not about fad diets, etc., but just eating right.I was dissapointed with this book, though.I thought I was getting a cookbook, and instead it was 3/4 reading and 1/4 recipes.I thought it was hard to follow. "You" The owners Manual is a much better book to read, which was written by both Dr. Roizen and Dr. Oz.

For any bodybuilders who are looking for something different and good to eat while cutting down, this is a great book.The best part is that the food is very simple to make, so even the most carb-depleted bodybuilders can prepare it.There are definitely a lot of ways to help you modify you diet in a way to make it still taste good.I should also state that this is ONLY a cook book, and dont expect it to tell you how to prepare your diet...

I found this book to be almost useless for the "family" although it may be great for the body builders.I could not find some of the ingredients such as the sodium free Accent or sodium free Mrs. Dash, which is in the majority of the recipes.I also could not find the low fat pancake mix at our local grocery.I'm assuming that you can find these ingredients in your "big cities".

These so-called doctors are misinformed. One needs to read Mary G. Enig's "Know Your Fats", Bruce Fife's "The Coconut Oil Miracle," Enig's and Sally Fallon's "Eat Fat Lose Fat" as well as Fallon's book, Nourishing Traditions. These books will give scientific information on what the real deal is concerning saturated fats, cholesterol and tropical oils. Enig is a PhDed lipid biochemist, and she has the correct scientific data regarding the true nature of fats. Castelli, one of the directors of the Framingham studies, admitted in the Archives of Internal Medicine, July 1992 that "the more saturated fat one ate, the more cholesterol one ate, the lower the person's serum cholesterol...."This sounds like a contradiction to what's offered in this book.Typical of the misinformation they offer, they put on coconut a virtual label of dietary poison, while the latest research is mounting that coconut and its oils are the healthiest, most beneficial fats of all.

I can't stand it when I read a book that sounds like it's for a 5 year old.The way the text is written insults my intelligence.Virtually no references are provided to support the claims and recommendations that the authors make.I suggest checking out Kilmer McCully's books for a more informative reading session.

I purchased this book on the advice of a dietitian, with the goal of lowering my husband's cholesterol. It has lots of minuses and a few pluses. I am constantly scribbling my own comments on the recipes, because they do not appear to be carefully tested or thoughtfully written. For example, some recipes say simply to put the ingredients in a baking dish, without specifying that you lightly oil it or use a nonstick one, and then at serving time the food sticks disastrously to the dish. With other recipes, after several tries -- first following the recipe verbatim, then adding my own variations to punch it up -- I have crossed them out as hopelessly dull. Another problem I have with this book is the binding, as many of the pages detached themselves in a short time. Finally, I have to nail them for listing as separate recipes "Skinny Burgers" and "Very Skinny Burgers," when the only difference is the amount of ground beef used. (Hello? Editors? Anybody there?) That said, there are some lovely recipes that even my fussy husband enjoys (e.g., curried chicken and peanut salad, homemade ramen, and oysters in crusty French bread), even though he often threatens to burn the book or throw it in the garbage.

This book was/is extremely helpful to me as an individual recently diagnosed with idiopathic cardiomyopathy.I do have a degree in Biology, but I think this book would be just a readable if I did not.Not only doesthe extensive list of foods and their CSI numbers help me on a daily basis,but also the recipes which designate the fat content, fiber, calories,salt, CSI number, and number of servings and/or serving size.I am amember of Weight Watchers because I recognize that even being overweight alittle adds extra capillaries to be pumped through to feed that fat,putting additional work on the heart.The calories, fat content, fiber,and serving size are needed in Weight Watchers to use their point system. I'm also on a salt-restricted diet ...another content number given.Ioriginally checked this book out at the public library.I am now orderingit on Amazon.com.I've researched a number of books via the library butonly ordered a few.That should tell you how valuable this book is to me. Thanks!

I reach for this cookbook over and over again, and I've yet to be disappointed by one of the recipes.The comments are helpful, the recipes easy to follow, and the results are always tasty. I read one reviewers' complaints about the pealla recipe, but I've made this dish several times for dinner parties, and I and my guests have always been pleased.The book offers a wonderful way to enjoy low-fat cooking without sacrificing flavor. It truly has become the bedrock of my low-fat cooking library.

A comment on my earlier review: I was going to use the author's recipe for paella until I read it more carefully and then I found that most of it went against the grain so I didn't. I understand that recipes for paella abound and that hers may be to other people's taste but it wasn't to mine. In the name of fat reduction she suggests that if the reader cannot get Spanish chorizo, but only Mexican chorizo, the reader use "light smoked sausage" (p. 154) because Mexican chorizo is "swimming in fat" (p. 144). While it is true that chorizo is quite high in fat, there is only so much of it in any particular serving and it is absolutely indispensable. Paella would just not be paella without it! Furthermore, she uses 2 boneless, skinless chicken breast halves and 1/2 pound boneless pork loin chops for 8 servings, in addition to 1/2 pound large shrimp. 8 fresh clams, 8 fresh mussles (understand that this is 1/4 chicken breast half, 1 oz. of shrimp, 1 mussel and 1 clam per serving and 1 oz. pork chops), and artichoke hearts, etc. (p. 144-145), and she says to cut the chicken and the pork into CUBES! While this may be fine for some, I could not do it this way. I omitted the pork entirely, and used what I prefer: bone-inchicken thighs with skin (I would use 1 per serving)), and I left them whole. Also, I omitted the artichoke hearts which I didn't think would work well enough, and I used more saffron than she says is necessary and no matter what recipe you use, I suggest that you use saffron to taste. Also, I would not (although one could) cook the chorizo in the stockpot with the rice-I panfry it. If the way I make it increases the fat content to some extent over the way she does it (her recipe has 7 grams of Total Fat and 2 grams of Saturated Fat per serving-but at 5' 3 1/2 inches tall, I know fromthe website of Dr. C. Everett Koop that I can have 50 grams of fat per day, so I don't know what the fuss is about), I think that that is vastly preferable, especially since one does not have paella every day. I am wondering what to do about the other recipes in the book about which I know nothing...

This cookbook is divided into sections each with recipes from soups to salads, entrees and desserts from a different international cuisine (French, German, Hispanic, Italian, Middle Eastern, etc.) complete with nutritional analysis for each recipe so that the reader can see just how many calories, protein,carbohydrates. cholesterol, sodium and total fat (broken down into saturated, polyunsaturated, and monounsatured) all expressed in grams or milligrams per serving, except calories, and use his calculator to compute the total number of calories and/or fat gramsper meal, if he needs to. There are mouthwatering color photographs of some of the recipes grouped together in two different partsthe book. Last recipeI tried was forthe Turkey Rolls with Prosciutto and Cheese (Italian). Because it is quite high in calories (408 per serving) I omitted some of the ingredients (flour, bread crumbs, egg substitute and bread crumbs). I liked it (although I didn't know what I was missing because I'd never had it/made it before) The author is good enough to say that it is traditonally made with chicken breasts so if you want to make it with them, you can do that too. Next on my list that looks beautiful-Chicken with Forty Colves of Garlic (French) and their Paella (Hispanic). Also Chicken Piccata (Italian),Aegean baked Fish (Greek) and Couscous with Lamb Stew (Middle Eastern). Highly recommended. Wouldn't want to be without it. ... Read more
