I have previously read many of Rachel Ray's cook books and had always wished there was one with more vegetarian recipes. Well, this one is just that. Simple, 30 minute meals that taste great and are easy to make.

I've made several dishes from this book, but I have to say a lot of them are so similar that it's not like a new recipe. I'm a big fan of RR's cook books, and granted this is one of her earlier ones. Her other cook books don't have many vegitarian meal- she loves her meat. So, this was a great idea. As she says in the beginning that her fans asked her to make it, and that's what she did. "The Roasted Vegetable" is a wondeful example of a cookbook which stays "on task" and fulfills the promise of its title.

My husband and I were bored, bored, bored with vegetables until we picked this up. Easy to make recipes with a minimum of cleanup and absolutely delicious. We use our gas grill to roast the veggies for extra kick and ease of preparation. All the recipes use common ingredients- many of them you can just whip up with what you've got in the house left over from your weekly shopping! Serve any recipe in the book with a nice grilled steak or piece of fresh fish for an exquisite meal.

I knew I had found a great cookbook when, as I leafed through its pages, every recipe sounded like something I would like to make.The vegetable tart featured on the cover is simple to make and always a hit.Every recipe I have tried has been delicious. Some can be more time consuming, but if you plan accordingly, they are worth it.This has definitely become my "go to" cookbook when entertaining, as the dishes are varied, uncomplicated, taste wonderful, and it's unlikely my guests have cooked them recently- although I don't know for sure- I've been giving everyone I know who enjoys cooking this book!!The bejewelled squash cubes are another crowd pleaser, and the herb-roasted root vegetables went over big with an avowed vegetable hater.Whether you are looking for a new side dish or a complete meal, I highly recommend this cookbook. ... This is my favorite Moosewood book, because everything is fast, and a lot of the recipes call for things that we have around the house.There's an African peanut butter and pineapple stew that we make all the time, for example, and it's delicious (we make it last minute a lot so we substitute frozen spinach, which we always have around, for the kale, which we have to make a special trip for).We have 4 other Moosewood books but we use this one the most (we use the first book a lot also, and the new classics one also.Still life and enchanted forest we rarely use.Our other favorite cookbooks are Jane Brody's Good Food, Tara Duggan's book, and Quick Vegetarian Pleasures).

Do you have expensive tastes?Are you rich?Childless?If so, then this cookbook is for you!I've never even heard of some of these ingredients and the ones that weren't too expensive are nothing that my kids would eat.In fact, I couldn't find a single thing that my kids would eat, and I don't think the average kid would either.I think most of these recipes are something only an adult would appreciate.Well, I guess I can't say that my kids wouldn't like ANYTHING out of this book.They'd probably like a couple of the dessert recipes.Check this out from your local library first.I'm glad I did.

This is a well written, interesting book. And mycelium running has more relevance than I ever imagined (if I thought about it at all). In general, I'd ditch science books for literature in 2 seconds. But I just can't put this book down. It's definitely worth your $$$.

The Blossoming Lotus in Kauai was the best vegan cuisine I had ever eaten in a resteraunt.We bought the cookbook so we could have more of there yummy food! The cookbook is great and the directions are consise. The recipes are easy and the ingredients are mostly natural. They have GREAT dressing recipes too. It also teaches you how to cook veggies the healthy and correct way.

Having recently enjoyed a number of wonderful meals at The Blossoming Lotus, Kuaui- I can whole heartedly recommend the restaurant and its companion cook book. I especially enjoyed the spiritual nature, beautiful imagery and uplifting quotes peppered throughout the book.

I have been wanting to add greens to our family diet for years but needed help learning about the individual plants and how to cook them. This book is a good primer, teaching the reader about the general character of each of the most commonly available greens, what nutritional aspects they add to the diet, their flavor, texture, and how they combine with other foods to make a better meal. Importantly, the authors provide advice about the best (and worst) ways to cook each green. The recipes are simple and tasty.

Kafka is opinionated and I don't always agree with her. (For instance, she hates dilly beans, thinks lambs quarters are far inferior to spinach, and loves ramps). But, I don't mind that - the world would be boring if we all agreed all the time. This is a fun cookbook with imaginative, good, and easy to prepare recipes, and I use it regularly.

Barbara Kafka's _Vegetable Love_ is one of the best cookbooks that I have ever purchased. I have made some twenty recipes (of the 700+), and every single one has turned out delicious.

First of all, in spite of the title, this is not a book filled with almost religious zeal on vegetarian cooking. Instead it is a book on vegetables. It's all about vegetables. And beyond vegetables there are some other things like avocados, which she thinks is technically a fruit rather than a vegetable. And she has some recipes on some unusual vegetables like hominy, well, perhaps not unusual, but not often seen in mainstream cookbooks. And how about a discussion on amaranth or burdock, maybe that's part of your standard diet, but my mother never cooked either one of them.

I recommend this book for fungi lovers old and new. Great tips and fabulous recipes, along with cute family stories. I use this book often for dinner parties and family dinners. The colorful cover makes a great coffee table addition, but I use the book so frequently I can't keep it out of my kitchen. I have given many as gifts to my culinary friends. It's a winner.

I watched my husband glace at the book and he just started reading it and about 15 minutes later I realized he was still reading it.He doesn't even cook!Anyway, inspired by his attention to this tome, I grabbed my tea yesterday and hung out on the pet's couch for a good read!I was not disappointed! I was excited to find an organic cookbook for babies and toddlers, hoping to find some new inspiration and/or healthful recipes for my 3 kids (all under the age of 4).I did glean a few new healthy ideas from this cookbook, but was really surprised about some of the things suggested to feed a 4 to 7 month old baby.For example, I can't wait to try the hummus recipe for my 4 year old and 22 month old.The recipe isn't that original in any way, it's more that I hadn't thought about making hummus in awhile.But, one of the first recipes suggested to make in the 4 ot 7 month old category is a rice cereal with raspberries and strawberries.For a baby that young??Yet, off to the side there is a note saying something about needing to remove all seeds from fruits because babies at this age cannot process seeds comfortably since they are so young.I don't know many moms willing to pick the seeds off of strawberries.Most of the recipes for young babies contain multiple ingredients, including olive oil, oregano or other spices and I have always read/heard that you introduce one food at a time using the 4 day wait rule in case of allergies.Much of the same is found throughout this age category of recipes.

I think every food book tells you something different on the subject of nutrition, and you can add this one to that list.I think it would be impossible for any author to keep current every piece of advice the 'experts' in America dish out.As a British author you can bet she didn't even consult them.Nor should she have.I find it interesting that many of the reviewers didn't even consider that fact in their reviews.

Every recipe I have tried in this book has been terrific....even the most bean-shy individual will have to admit that beans can be tasty.I didn't have a great deal of experience cooking with beans and lentils, so I appreciated the cooking method section.I can honestly say that this is the best cookbook I have ever bought.

I bought this book many years ago as the first of what is now a fairly large collection on the subject.As the title indicates, it concentrates on the EDIBLE fungi, so the reviewer who was dissappointed because he/she could ID only one of the 13 mushrooms he/she found has unfair expectations out of the scope of this work. That said, only the most popular edibles seem to be listed here, and variants on those species are not covered in much depth. It's ok for those who just want to be able to distinguish a golden chanterelle from a jack-o-lantern, or a morel from a thimble-cap so they can safely gather some edibles. The worst thing about this book, however, is it's unfortunate recipes. Every single recipe I've tried from it completely sucks. Either the cooking method is inappropriate to that particular mushroom (turning delicate specimins to mush, for instance, or inundating absorptive ones with oil), or strong flavors from other ingredients overwhelm the sometimes subtle flavors of the mushrooms themselves. I get much better results by trusting my cooking intuition and experimenting than I do by following these recipes. ... Read more

A well written, detailed book wherein each chapter brings a new vegetable and great ideas. I was primarily looking to make vegetables play a more central and creative role in my cooking, and this book has been the answer. You'll be carmelizing onions and braising endive in no time.

I love Cook's Illustrated. I subscribe to their magazine, I subscribe to their website and I own several of their cookbooks. Very rarely have they ever steered me wrong with any of their recipes and tips. This is one book that I was disappointed with, however---not because the recipes aren't great or the layout of the book isn't up to par, but because many of these recipes can be found in their comprehensive cookbook "The New Best Recipe" (a great book, btw. It has just about everything you could ever need). There are only a few different recipes in Perfect Vegetables that cannot be found in the New Best, and the money I spent to get a handful of new veggie recipes was not worth it, in my opinion. If you already own the New Best, than I would be very hesitant to spend any money on this book. I would physically look through the book at a bookstore before buying to see if this is something you would really like to own. If you don't own New Best and are looking for a wonderful veggies cookbook, than this one is for you!

This book has been out of print for the last few years.I have searched in every used book shop and yard sale from NY to AR- but with no luck -apparently no one wants to give theirs up!And with good reason - this amazing cookbook has everything you'll need for growing, buying and cooking all kinds of vegetables.The recipes are family friendly and memorable.I found myself cooking and enjoying vegetables my family doesn't normally care for - try the eggplant rollatini or the carrot/chicken fricasse and you'll see what I mean!I plan to stock up on this book- you don't have to be a gardener to enjoy this book and it will make a terrific present for friends and family!

Yes this book may be dated and has non-vegetarian recipes included but that does not exclude it from a good vegetarian cookbook library.I have some of the biggies of the cookbook genre and with internet access so easy I rarely use any cookbooks at all.However this cookbook is the mainstay of my library for a few reasons.One it lists vegetable chapters alphabetically and if one is not listed it is easy to locate in the index.Two before the formal recipes are given for say carrots it tells you all about carrots and gives a number of quick ideas and methods for using carrots that involves 1 or two steps only.Three and I could go on, the recipes go from basic, to country, to sophisticated and everywhere inbetween with substitutions often suggested.If I had to keep one cookbook, besides the one I bake with, I would keep this one. ... There are few cookbooks that are as universally useful as this one. While the subject matter (pasta sauces) is limited, the situations in which you can use these recipes is almost limitless. The book contains simple recipes that make me think that my mom was slacking when she fed us bottled sauce when I was a child. And you can find elegant recipes that use unusual ingredients in imaginative ways. Best of all, you'll love this book if you're a budget-constained novice (like my recent college-grad brother to whom I gave this book - many of the recipes are neither expensive nor difficult) or an accomplished cook, especially in Italian cooking, looking for new ways to prepare pasta. Regardless of your situation, you can find a good recipe in this book. Frankly, this book is indispensible if you want to cook interesting pasta. My copy is so stained from the many sauces that I've cooked that I have an extra "clean" copy that I'm saving for posterity.

This is one of the very best cookbooks I have ever used!Out of 75+ cookbooks I own, this one gets used repeatedly.The sauces are delicious, and for the most part, very easy to prepare.The recipes are so simple to follow that I prepare most of the sauces from memory now, and it should take only 2 or 3 preparations before you can do these sauces by heart.With a few exceptions, the ingredients are all pretty commonplace.There is almost nothing in your garden that cannot be used in one of these sauces.4-0 out of 5 stars My new default cookbook

This is a great book for folks who are looking for some good, dependable recipes for keeping vegetables on the table.There's a helpful profile of each vegetable, including seasonality and things to avoid when selecting at the store, and general preparation instructions as well as specific recipes.As a frequent and enthusiastic cook, I was excited to try some of the less familiar items (armed with a trustworthy recipe).Written by Jack Bishop, who is featured on America's Test Kitchen, and knows his stuff.Good reference for on-the-fly cooking, great reading before a trip to the farmer's market.

Visually, this book is impeccable. The food stylist, graphic designer, and photographer have done a fantastic job of showing the fruits and vegetables in an appealing and stimulating way, sliced and angled just so. The typography and look of the book is probably one of the nicest on my shelves. But it's not just a good coffee table book. Most importantly, it contains enough detailed information on a quite impressive range of fruits and vegetables that it has quickly become my favorite reference book for fruits and vegetables.
